If anyone thinks how to know it, a mummy of a famous priest of that time was found. The voice box was perfectly preserved. They did a CT scan of it, created a 3d model and then passed air through the larynx contracting expanding it using appropriate technology and this is how it came out
That process was actually how they recreated what sound that priest would make under certain conditions. To get the languages someone had to analyze ancient writing and figure out which of their scripts letters made which phonetic sounds and dub it.

Well, they could knew it by using archrologists who can translate the language, and also there's a lot of information in the acient languages. But also they can know because our central languages are mostly based on those languages, along with the accents
