    You get „neuer Süßer“, „Federweißer“ and „Bizler“ after pressing the freshly harvested and pressed wine grapes in the Progression of yiest induced fermentation. So the level of alcohol and wine aroma rises while sugar decreases.
    You have it with Zwiebelkuchen (Onion cake: yiest Dough covered with pan fried onions and bacon in an egg Creme fresh cover) - great combination!!!

    Love Freiburg - I used to live at an apt about 30 mins north of there. A few years ago during a visit, I liked taking the streetcar+bus (very fast) to the Schauinsland cable car, then hiking at the top. And for downtown, I like that parents can buy their kids these tiny toy boats from street vendors, so they can float them in the "bächle" water channels in the street. Thanks for the great tip on the tapas place!

    My wife and I just recently discovered your channel and, as Americans who have been living in Freiburg for numerous decades, are totally enjoying seeing video footage of places we love so well. It looks like you used to live in the Wiehre. We agree with you that Bäcker Bühler is the best bakery, although it just changed hands a few weeks ago. We used to live half way between Bühler and the playground your son enjoys so much.
    As to the best beer in town, have you tried Martinsbräu? They sell craft beer, too, these days but my favorite there is their standard Pils. You need to try it if you haven’t already.
    And may I suggest trying out Afghaneck in the Innenhof just north of Siegesdenkmal. It’s a little hole in the wall but I just love their food. If you do and like it, I’d be tickled pink if you happened to make a video there and caught the owners on camera. 😊

    Good job! Here's a little addition: "Neuer Süßer", "Federweißer", "Bitzler" and a lot of other names describe each current status of the developing new wine. From sweet with (almost) no alcohol yet step by step to the full power. Or the vinegar... But most importantly: enjoy new wine ALWAYS with Zwiebelkuchen! Otherwise it's kind of a crime 😉.
    And for (German) dinner: try the "Kartoffelhaus". It's in the Basler Straße catty-cornered to the church. I highly recommend a reservation. It's not all potatoes there but lots of pretty good stuff.

    • @TypeAshton

      So, a funny coincidence. I honestly just told Jonathan last weekend that I wanted to try Kartoffelhaus! We walked past it on one of our Saturday walks and I saw the really nice outdoor seating area. It was about 2:30 in the afternoon and it was packed! Always a good sign to see when a restaurant is that popular. I think we are going to need to try it very soon (and the Zwiebelkuchen too!)

I`m confused....

    There are different names for fermented grape must..in Germany it´s mainly called "Federweißer" and the term "Neuer Süßer" is according to my understanding just in the Schwarzwald region common.
    And it is popular everywhere in Europe where wine plays a role..
    We in Austria call it plain "Sturm" (Storm) because when you drink too much of it you will get heavy flatulence and in consequence then diahrrea for one term and therefore the name "Sturm/Storm" because it is stormy in the guts....So be careful with the amount you drink because it is soo delicious you are allured to drink too much of it...
    And don´t close the bottle tight when you store it in the fridge, because it is still further fermenting therefore the air has to escape to avoid an overpressure in the bottle...just a tip

    • @TypeAshton
      @TypeAshton  2 ปีที่แล้ว +2

      MS: Hallo, "Süßer", "Sauser" and "Federweißer" are different stages. Federweißer is the last stage before "Neuer Wein". Each stage contains less sugar and more alcohol. And of course every area has their own names for it (anything else would be too easy ;-) ).

    Hey Ashton and Jonathan,
    Thanks for sharing "your Freiburg" with us. It makes me happy and proud you do like it here as I do feel very dear about my homeregion and Freiburg as my dad's birthplace.
    I have a great passion for culture, food, language and history and I used to be a tour guide in Freiburg and the Black Forest. I am currently starting an apprenticeship as carpenter in the valley of the Kinzig but I do come to Freiburg regularly still.
    I would very much like to offer you to give you a free historic city tour for yourself (and any friends you would like to bring along). It would be a great pleasure to me (maybe even more of gift for me then for you as I enjoy it so much, especially with folks like you guys who seem to be really interested in things to detail). I hope to say that I may be able to share with you some secrets, stories and local (alemannic) idioms you may not yet have come across.

    I'm so glad that I've found your channel! I moved to Freiburg from another part of Germany 20 years ago, and it's nice to see my home town from another perspective :) Did you visit the Mundenhof with Jack already? I guess he would love the animals there. Oh, and by the way: try the Lange Rote (the long red sausage) at the Münstermarkt and, of course, Stefans Käsekuchen (cheesecake)! And if you like Casa Espanola, I did you try Cabana? It's a pub-like spanish restaurant on the other side of Casa Espanola, at the Gewerbekanal :)

      Wow thank you so much! We haven't yet taken Jack to the Mundenhof but it is on our to-do list. If the weather is nice we may go in a week to two for his birthday. And OH YES THE CHEESECAKE. I must admit that as an American, it is a bit different from the New York Style cheesecake I am used to.... But the blueberry flavor is divine.

    When I see the Urach Spielplatz it remembers me of my childhood in the Wiehre. There is also a great Spielplatz in the Erwinstraße. Maybe you're a little confused when you visit it, because it's build on an old cemetery. But after Kindergarten or school, I always played there with friends and my sisters.

    • @TypeAshton
      @TypeAshton  2 ปีที่แล้ว

      There are so many great playgrounds in Freiburg. They recently renovated the Spielplatz in the area of Wallstraße/Dreisamstraße/Schwabentorring. It is not as large as the one we visited in Weihre, but a really nice play area that is tucked away in an otherwise very urban area. So nice.

    Freiburg is a really nice place to go to for a weekend trip. Been there several times, although that was, well, two decades or so ago. If you plan future trips to see Germany, I also recommend Franconia, especially Mainfranken (where I come from) and the Fränkische Schweiz. The former will be more similar to the Schwarzwald region, although a bit more levelled, while the latter can be quite steep and cragged in contrast. Well, and of course cities like Würzburg, Bamberg and Nürnberg are always worth a trip, too.
    BTW the Neuer Süßer, or Federweißer, as we call it in Franconia, is a partly fermented grape juice, just in case you didn't know already. So it has some alcohol already, but is still sweet - and if you have too much, it may run right through, so be warned 😉

    You mix something up.
    What you have is a white bratwurst (grill bratwurst) and not a white sausage.
    Weißwürste were traditionally manufactured early in the morning and prepared and eaten as a snack between breakfast and lunch. There is a saying that the sausages should not be allowed to hear the noon chime of the church bells. Even today, most Bavarians never eat Weißwürste after lunchtime (though it is perfectly acceptable to have a lunch consisting of Weißwürste at, say, half past one).
    The sausages are heated in water - well short of boiling - for about ten minutes, which will turn them grayish-white because no color-preserving nitrite is used in Weisswurst preparation.
    Yours is Weisse Bratwurst or Rostbratwurst. It is made from ground pork and is heavily seasoned. Traditionally, it is grilled over a wood fire and served on a cut-open roll with mustard.
    Thanks for your vlog :)

    • @TypeAshton
      @TypeAshton  2 ปีที่แล้ว +1

      Ah yes, another fellow viewer also just let us know about this mix-up. Thanks so much for catching that and such a great description on the Weißwürste! It is so different from American "breakfast sausage" and really tasty! Thanks again for watching along! We're glad you enjoyed the video.

    • @Ginkoman2
      @Ginkoman2 2 ปีที่แล้ว +1

      It could have also been a white bratwurst though. Like a weißwurst from hamburg or berlin where they are also used in currywurst. The are made different than the bavarian weißwurst.
      But yeah. the "classic" weißwurst are only heated in close to simmering water. Germans and their Wursts xD. But i think thats a side cinsequenz when every town has their own special wurst style.
      weißwurst with pretzels and sweet weißwurst mustard with a Weißbier is one of my favourite "brunch" style breakfasts when i have old school friends visiting.
