  • Baked Ziti alla Pugliese are a rich and tasty traditional first course, enriched with hard-boiled eggs and meatballs for an explosion of flavours.

    🍳 INGREDIENTS 🍳
    FOR THE SAUSAGE SAUCE
    fresh pork sausage 250 g
    extra virgin olive oil 40 g
    garlic 1 clove
    tomato puree 1,2 kg
    white wine 100 g
    basil 5 leaves
    dried oregano to taste
    Salt to taste
    FOR MEATBALLS
    minced beef 320 g
    grated pecorino 70 g
    medium eggs 1
    breadcrumbs 1 tbsp
    chopped parsley 1 sprig
    extra virgin olive oil 20 g
    Salt to taste
    pepper as needed
    FOR THE STUFFING
    ziti 300 g
    boiled eggs 5
    mozzarella 250 g
    grated pecorino 80 g
    🍳 PREPARATION 🍳
    00:00 - In a large pot (or pan) heat the extra virgin olive oil together with the garlic; as soon as it turns golden, add the chopped sausage and brown everything for a few minutes.
    00:41 - Deglaze now with the white wine, let it evaporate, remove the garlic and add the tomato pulp together with the oregano, a pinch of salt and let it all cook covering with an anti-splash net for about 30 minutes over low heat or until thickened.
    01:22 - In a bowl, combine the grated pecorino, chopped parsley, egg, salt, pepper and breadcrumbs with the ground beef. Mix everything well until the mixture is homogeneous and form small meatballs of about 10 g each.
    02:05 - Cook the meatballs by browning them in a large non-stick pan with a drizzle of extra virgin olive oil until they are golden brown; once ready keep them aside.
    02:26 - Peel the boiled eggs and cut them into wedges. Break the ziti into 3 parts and cook them in plenty of salted water. When the sauce is ready, add the chopped basil with your hands, mix it with the sauce, then put half of it in a separate bowl, leaving the rest in the pot, adding half of the meatballs.
    03:26 - The ziti are cooked, drain them very al dente and transfer them to the pot where the gravy is
    03:40 - On the bottom of the pan, place a generous ladle of gravy and spread it well with the back of a spoon, then drizzle with a drizzle of oil. Arrange half of the seasoned ziti on the bottom of the pan and spread them evenly; add half of the hard-boiled eggs by scattering them on the surface. Sprinkle with half the grated pecorino and half the chopped mozzarella
    04:00 - Form another layer with the remaining pasta, sprinkle it with the remaining ingredients: sauce, minced mozzarella, meatballs, hard-boiled eggs and grated pecorino. Sprinkle the surface with a drizzle of extra virgin olive oil and grate your ziti alla pugliese under the grill of the oven at 250° for about 13-15 minutes, until the surface is golden brown. Once ready, remove them from the oven and let them rest for about ten minutes before serving.

    Da provare, nn ho mai mangiato le uova sode all interno di paste come in questo caso, oppure in torte salate come invece nel casatiello 😁

    Io sono pugliese, abbiamo sempre messo le uova sode, mozzarella e polpettine fritte, ma il sugo è fatto con il misto di carne ( involtini, costine, salsiccia, cotenna) niente origano ( che uso solo nella pizzaiola)

    Anche al mio paese si usavano le uova sode nella pasta al forno , io questa ricetta non la faccio più , per me è molto laboriosa , le polpettine si fanno proprio piccole e si friggono , è buona che non immaginate , provate a farla se avete tempo non vi pentirete , le uova se non vi piacciono non le mettete .

    Assomiglia alla pasta al forno alla Pugliese, ma non è l'originale.. Per prima cosa si fa un ragù con carne mista e non si mette assolutamente l'origano.. Il resto potrebbe anche andare, mamma ci metteva anche della mortadella e se su condisce col sugo, non va assolutamente l'olio a crudo sopra..
