    I can't find the coffee's with cream and sugar locally so I reuse my pill bottles and put regular coffee, sugar and creamer in them. Works out very well with my French press by Stanley. If nothing else I can have some good coffee which is always welcomed especially in cold weather. Really enjoy your videos. Take care and God bless.

    That pole cooker reminds me of what we call a "squirrel cooker". The pot hanger has a fork on the other end so that you could roast meat or veg over the fire/coals. Cheers from across the way!

    Good choice of ale Paul, which is brewed just across the river swale from me. I'm more of a Shep's 1698 myself but "The Nuns Delight" is an excellent substitute.

    Ale is great with chili beef. I sometimes add a bit of whisky with that as well, just for a little extra bite. If I do it in the oven I sometimes add some bread crumb on top as well and allows it to form a crust on top of all the chili goodnes underneath.

    While I am suggesting things... I am sure you can get a much better cup of coffee using an old Indonesian method called Kopi Tubruk (roughly translated as Colliding Coffee, meaning the collision between the coffee grounds and the hot water)
    Arguably the easiest/low tech coffee ever, very suited for backpacking or if your machine is on the fritz...
    Just boil some water, put ground coffee (your favourite brand is just fine) in your cup (the amount you need for the amount of coffee you like to make), once the water is boiling, remove the kettle from the heat, leave it to get off the boil for 15-20 seconds or so (coffee brewing water mustn't/shouldn't boil you know) and put the hot water in with the coffee grounds. Add your sugar and/or milk (adding milk or condensed milk will make it a Kopi Susu) if you like that and stir for a bit...then leave it for a minute or two. The coffee grounds will settle to the bottom of the cup after which you can enjoy a good cup of Kopi Tubruk, the Indonesian style camp coffee... Obviously do not stir after that or agitate the brew to much.
    No need for those awful (relative therm of course, comes down to taste and personal opinion) packets of so called quality brewing powders...

      Cooking on a slope makes it so versatile. I really like the fact that you can take the sections you need when backpacking. It's snowing heavily here ;)

    Ooh great video. I would prefer a litle more stealthy and a wind breaker so you wont get the smoke in your eyes.

    Beautiful Paul, nothing like a hot pot type meal in the woods, looked delish mate. Are those woods owned by the council? I have a massive woods behind my house that's off some playing fields but I'm always worried about starting small fires just in case I get grief off them and walkers etc... cheers Paul.       The woods are on a 99 year lease to a company that started an artificial ski centre. The centre burnt down 15 years ago and is being redeveloped into housing. From what i have read they had to lease the whole wood even though the ski centre was a few percent of the land. I don't really get any hassle having small fires, i get more in the comment section to be honest ;) I find if you meet people they soon see it's under control and after a small chat they are happy :)

    Unless the beef is really high quality (good cut that is which does not need lots of cooking to become tender) it will take some time to cook until tender. You may want to try heating the meat and possibly some (if not all) of the ale and transfer it boiling hot to a double walled flask to let the heat in the ale/beef mixture cook itself... After few hours in the flask the beef will be tender beyond belief. Even the lesser cuts, even the sinuous ones. Your reluctance towards fat could turn even because the fat in both beef and pork equals loads of flavour. Most likely you mean the collagen (the tough and shiny membrane usually surrounding meat like the one you used in this video) you do not like which will turn into gelatine after those few hours cooking in the flask. Heat retention cooking takes some planning and obviously needs to be started some time before you want to eat it but in most cases it is well worth it. You could do dishes like Beef Burgundy in the forest...And you do not need to tend a fire for the time it is cooking...you can take a hike around the area, leave the flask at camp or take it with you, do some fishing or foraging while your beef is cooking itself to absolute perfection... bon apetit.

    You cut through that 16" tree with an axe?? I think somebody is telling porkys. The cut on it is dead straight, very much like a chainsaw cut.
