I did only use 3/4 cup of sugar instead of 1 cup. I also had to bake my muffins for 35min instead of the 22 minute recommendation. I highly recommend this recipe for everyone to try.

I love that you use so much pumpkin in this recipe. They have a very velvety texture that is divine! I might have over mixed mine as they didn’t rise up very well, but as mini muffins they were such a hit with my kids.

Pretty good, didnt have the same oil as you so i used olive oil instead and agreed with others 3/4 brown sugar. I also put chocolate chips on top however it was too sweet so if you do put them on you should put 3 or 4 max of chips and without the chocolate it was still delicious!

You are so right, these really ARE the BEST EVER!! So delicious, moist, flavourful and the most fiddly part is chopping, peeling the pumpkin ready to steam, as we can't get canned pumpkin in New Zealand. Made these vegan by replacing it with 1 flax egg and 1 tbsp apple sauce and used grape seed oil instead of coconut and they were super moist soft and fluffy!
I finally found a pumpkin muffin recipe where it uses a 'whole can' of pumpkin puree instead of a partial can . . .I'll be back later with the results !

I'd like to say that these muffins were dry, crumbly and had no flavor. BUT I CAN'T!! These were wonderful. Truly moist with great texture snd terrific flavor! Easy to make and ready in no time. I have about 6 or 7 other pumpkin recipes on hand but these gave moved into my number one spot. BTW, I've long switched to silicon baking pans and silicon cooking mats. No paper cups, no oil or butter or flour to ensure no sticking. Just pour the batter, bake, cool and pop them out by pushing the bottom of the cup. Don't know if you've tried them. I'd use neutral oil instead coconut, 'cause the flavor of this one covers the flavor of the pumpkin.
