For best thermal efficiency follow the below mentioned steps one after another 1) membrane filteration by Ultra filteration or Reverse osmosis ( water removal up to 60%) 2) Evaporation using a falling film evaporator (water removal up to 25%) 3) Two stage spray drying / Extended two stage drying with agglomeration or instantization Final product will have up to 3 % water
Probably due to additives in the water we use to reconstitute the milk e.g. fluoride, chlorine, minerals. And some of the proteins and sugars in milk change with all of the heat added during evaporation and filtration.
