I love these dipped in a salsa picante. Probably my favorite food on earth. I have found that cooking the bacon by itself, until it begins to wrinkle, then wrapping the shrimp and cooking for 12 mins at the same temp delivers good results as well. Cheers.
He said the shrimp temp is 120F, so, no, the shrimp isn't overcooked. However, I think the bacon is undercooked. I'd probably cook the bacon halfway before wrapping the shrimp.

Thanks for this! One tip: when you season things, put them close together, not spaced apart. You'll waste less seasoning, and it's a bit easier.
I agree with that for all meats. If you’re gonna cook a lot, might as well put a good amount for all the meats.
