I appreciate the blog post about life after gluten. I was diagnosed with Celiac five years ago, and it can still be difficult socially. People automatically think that if you ask for gluten free that you're a hippy on a diet, and I have to explain that I have an autoimmune disease, and if I eat any gluten (or just get cross contaminated) I'll have to be in bed for a few days and my hair starts falling out, etc etc. It's nice to be represented, and to see that there are others like me around.
+errinne hatch I agree it isn't good to automatically assume someone isn't Celiac if they ask for gluten free but I think people just do because Celiac is quite a rare condition and the number of people who do it for the wrong reasons completely outnumber the genuine ones.
I think most well adjusted people recognize that celiac is a reality and in the midst of the anti - gluten fad there are people who actually can't have it. I wouldn't worry too much about it
+errinne hatch you shouldn't need to explain yourself. if you want gluten free for whatever reason, people have no right to judge. anyone that do can go fuck themselves.
+LavendreTownSyndrome Thing is that even those who realize celiac as a real thing often doesn't understand the extent of it. People often think that if you avoid bread everything is find and dandy and they have no clue about cross contamintion (this is how I got sick for the first three christmases with my diagnosis). You also become very limited with going out bc at many places resturaunt staff doesn't have enough knowledge either (Example: I went to this really nice cafe where they could make me a sandwich bc they had gluten free bread...but the girl making it used the same butter, knife and cutting board for mine she did for others).
Oh wow, I used to know someone with Celiac disease and I had no idea about the cross contamination! Thank goodness I always just ate what she did if I cooked, I'd have felt so terrible if I'd have made her ill.
I think the problem with the whole gluten free thing now is that it's mentioned everywhere so people are sick of hearing about it, but Celiac disease is never mentioned with it so no one really associates gluten free things with the people who actually need them. They just think about 'awkward' or 'difficult' people or the people who are just following a trend and that's awful!

Why is your baking paper always brown? Is it a British thing or does Ben recycle used baking paper to save money?

I've lost count of the amount of times Ben has described something he has made as "dainty". I think it's about even with the amount of times he does that shakey hand thing when he says how long to put something in the oven for.

for the last one we cut our "joulutorttu" like that which is just Christmas Tart. but we put prune inside and fold the corners on top not under haha

In Finland we do the third folding technique and fill it with plum jam and call them "christmas stars", pretty much everyone makes them here during christmas :)

Mike went "I'm the one without the accent" but as an American, you all have accents to me. I have now proceeded to mix all of you up. Mike is now James; James is Jamie; Jamie is Barry, and Barry is Mike.
