I cooked this dish many times. To improve the taste 1) add in Pork lard, 2) add in chicken stock, prawn stock is not enough. 3)optional: add pork meat or calamari(sotong) or both. This dish is very delicious, a variation of this dish can be seen in Singapore called Hokkien Noodle based on Prawn stock as well, it is very popular there but the cooking technique is quite different. TH-cam this dish you will find out. Penang's version is slightly different too. All equally delicious, do try at least one of them. One of my favorite noodle dishes.

不可以❌用這種太大路的魚露喇,米粉會哭。魚露是 越南 > 泰國 > 香港 > 大陸 。頂級的魚露是越南家庭手工生產的,裝在小號礦泉水瓶子裡,一支十塊錢美金吧,需要親自去越南買,或者託越南朋友買。退居其次,也要買越南工廠生產的,有六十度、四十度 等標籤,越高度數代表魚肉含量越高。不一定越高越適合,要看用途,越南雜貨店有售。一定要買有標明度數的,那代表一間魚露廠的認真執著。如果真的找不到,有度數的泰國魚露將就可以用。根據經驗,超市有賣的魚露都很差。本人是潮州人,自小就吃魚露,不斷比較才有這心得,不是亂吹的。較好的魚露KL的 Pandan Perdana Trinh 珍越南雜貨有售。

@@MrHongKitchen 十塊美金那種只是說一下罷了,實在難買。越南雜貨店裡十五塊馬幣一大瓶的也很好了,一點不貴,比起超市的划算的多。魚露的確在這裡地位不很重要,但在你煮的魚露米粉中就是關鍵角色了。
