Yema Cake by Mai Goodness | Fail-Proof Steamed or Baked Chiffon Cake Making For Beginners

  • Creamy but not too sweet Yema Cake made with chiffon or sponge cake topped with creamy mixture of milk, egg yolks and butter with a hint of lemon. A chiffon cake that your family will love. It can be made easily at home as it includes simple and complete instructions for beginners in baking.
    Yema Cake
    Ingredients:
    Chiffon Cake
    Egg Yolk Mixture:
    • 4 large egg yolks
    • 1/4 cup + 2 tbsp (80g) granulated white sugar
    • 1/4 cup canola or corn oil (vegetable or palm oil may also be used)
    • 1/4 cup + 1/8 cup (100ml) pineapple juice or orange soda
    • 1 1/8 cup (150g) cake flour, sifted twice
    • 2 tsp (5g) baking powder
    • 1/2 tsp (2g) iodized salt
    • 1 tsp vanilla extract
    Meringue:
    • 4 large egg whites
    • 1/4 tsp cream of tartar
    • 1/4 cup + 2 tbsp (80g) granulated white sugar
    Yema Frosting:
    • 4 large egg yolks
    • 1 cup (250g to 300g) condensed milk (adjust on your preferred sweetness)
    • 1/2 cup (125g) fresh milk or evaporated milk
    • 1 tbsp cornstarch
    • 1/4 of a block (50g) of unsalted butter or margarine
    • 1 tsp vanilla extract or flavoring
    • half of a lemon zest, grated
    • 1/2 tsp iodized salt, add only if using unsalted butter
    Baking Pan:
    8x3 inch round baking pan or you may use 2 8x3 loaf pans
    Baking Temperature and Time:
    160⁰C for 55 to 60 mins or until the top turns light brown and firm to the touch
    Costing:
    Cost of ingredients = P150
    Overhead cost (40% of ingredients cost for elect, fare, gas, water etc) = P60
    Total Cost: P210
    Yields: 1
    Net Cost per piece = P357

    This cake is yummy! Ito ang binibili ko palagi sa bakery ng pinsan ko sa Pinas pero walang cheese topping at ang kulay ng yema frosting ay light brown or mocha color and bit firm with an artistic design on top. 😋🙏 God Bless.

      Makapal ang frost hindi flowing. Kailangan thin lang para hindi rin heavy sa chiffon.

      Halos magkapareho sila ng paggawa at magka mukha pero ang sponge cake ay mas less ang ingredients at walang oil or pampa alsa, ginagamit lang nya yung eggwhite para maging springy at medyo dry while chiffon is a mix of a cake and sponge cake. Light, fluffy and moist, may oil at baking powder.

    Nag try ako kagabi..kaya lang malabnaw ung frosting kahit more than 5 min na syang pinakukuluan in low heat..so nag add ako another 1 tablespoon ng cornstarch..aun..lumapot sya at perfect n ung consistency😊
