Hello. This video is pretty old now, so you may already know this, but at 6:31 in the video, the black knob is for changing the speed of the automatic gearbox. When pushed in as you have it in this video, the slicer works automatically in SLOW speed. If you pull the black knob out (toward the operator) and lift it up slightly, it will lock into the other position. This will allow the slicer to work automatically in FAST speed. Personally, I don't like this setting. It moves the carriage back and forth so fast, it gives the impression you are trying to sling the meat onto the back wall. ;o) Also, when engaging the auto mode, I have found it best to have the carriage pulled all the way back toward the operator, so the mechanism can engage smoothly. If left in the middle of its travel as the gentleman in this video did, it places a shock on the machine since the mechanism underneath the machine is at full speed. It's better to have in engage at a location where the mechanism is changing direction from forward to back since the movement will be slower and less abrupt. For clarity, picture a piston in an engine in the middle of its stroke vs. at top dead center (where it comes to a stop, then goes the other way). Have a great day!
Actually chicken (and lots of other proteins) could be cut/sliced on this slicer. What was not shown was partially frozen proteins that sliced very well with this machine at the thicknesses we wanted for our menu items. This video was part of a process where we looked at a variety of equipment (both domestic USA and foreign) before deciding the best mix for our limited space, without causing bottlenecks in the operation.

The numbers on dial don't measure anything. They are just used to reproduce results.
