Nice list! Completely agree with your choice of the Bulleit 12 Yr Rye. The most high end bourbon I like to treat myself to is Eagle Rare, simply can't afford to use EH Taylor when its over $125 as a mixer. I would recommend trying Penelope Valencia in your next Old Fashioned, especially if you enjoy orange citrus notes in your drink. Want to have a nice new experience? All of those sound great. It's have to add penelope Valencia to the list. Peroneal for me it's a go to but falls under that allocated spot. Another good one i like that's not allocated and around $55 is Russell's reserve single barrel. Cheers!
All of them are great in an old fashioned. My personal favorite is mitchers single barrel rye. Its a little lower in proof so i just add 2.5 ozs instead of 2. Thanks and cheers 🎉🎉🎉
Maker’s Mark Cask Strength is good if you want a sweeter old fashioned. I also like the green river full proof when I want something with more spice. Both hold up over ice and are $45 or less here.

Sazarac Rye is my go-to for an Old-fashioned I keep a few bottles on hand for that reason. Stagg Jr 24B is my all time best Old-fashioned did Angostura, Fee Brothers Orange Bitters with scant quarter ounce rich Demerara Syrup (more than i usually do but helps tame the high proof) damn good! Treat yourself don't cheat yourself!
Love WT 101, as far as the grand mariner goes that’s one step too for for me personally with an old fashioned I’m basic when it comes to an old fashioned lol

Balcones Texas Rye. Weird tasting spirit but when you add any sweetener to it the cocktail becomes magical.
