I don’t usually comment, but I had to say thank you for motivating me to get back into baking. I’ve been in kind of a block for motivation but your videos are so satisfying and it gave me inspiration to start baking again.

I just made my first meringues (they are in the oven now) and I felt like I was doing this all wrong and nothing was coming out right based on the recipe description. Everything looks like it does in your videos and it's giving me the confidence that I did things correctly.

Sugarbean, may i ask what you do with all your leftover yolks? i use a lot of eggwhites making almond bread, macarons and meringues but there is only so much custard i can use, and pasta i want to make. I'd love some ore ideas. Lately, out of desperation, I have begun using yolks and water to dip schnitzels in but i have so may frozen yolks, some with a little sugar, others with some salt in my freezer....

@@jobagirl sometimes air conditioning can help, but she might have a dehumidifier as well. we have one at my house, a box that has a bucket in the bottom to collect water.

I actually meant the making of the meringue and baking varies so much in the high humidity we have in western Japan....
I never baked mine with open oven door may be it helps to dry them up
