These are simply adorable! I would love to make some this year. I noticed in some of your other meringue videos you heated the egg mix in a double boiler to 50C but didn't here. Why? I don't know why you would or wouldn't do it. If it's not necessary here but is in other cases, what makes the difference?
These are adorable and festive! I really want to try making them sometime! I saw that on one comment you said you whipped the meringue to soft peaks. I was wondering how you got your meringue to stay set, and not deflate or melt. Love your channel! I hope you are doing well, and thanks for sharing!
I have the same issue! The second I finish whipping it's perfect soft/stiff peak, but in 2 minutes it starts turning a bit runny, so that I can never squeeze a circle like Sugar Bean out of the piping bag.
Heat the sugar and egg white until 54°C. It is more stable. And beat until soft peak but a little bit stiff. The tip not bending too much if you lift the mixer. Then add the sugar ratio. I usually make 1:1.5 for egg white : sugar. This make more stable.

For the ones that are confused... she pre heats the oven first and then puts them in and bakes them open door for 90-100 minutes.

I was wondering the same. Everytime i only could think how are they not losing consistency? Not even even cream of tartar you get 25m more to work it
