    Thank you!! 👍😍 We Korean call this “LA galbi (ribs)”. One of the theories for the origin of the name is that Korean immigrants living in Los Angeles, California innovated this cut. We almost always add garlic, sesame oil and pear. But Chef John’s galbi looks so yummy too!!

    Add a Korean pear or kiwi to the marinade to tenderize the meat. Also, depending on the store that sold you the short ribs, you might need to wash off some bone debris.

    I was introduced to this cut of ribs when we lived in Guam. Some of the ladies I met would bake them in a pan with a whole bottle of soy sauce and big chunks of onion. That's it. And oh god, they were so good and surprisingly not overly-salty at all.

    Costco sells like 5lb bags of these. First time I bought one I didn't realize they were sliced thinly across the rib bones, or that they were sliced this thinly period. I had intended to braise them but ended up cooking them this way. I don't know why he doesn't mention it in the video, but if you want traditional recipes for these just search for Galbi as that is what they are called in Korean BBQ. Korean style marinade is different but the cooking instructions are otherwise the same (long marinade, short cooking time).

    I've been making these four years! I use kikkoman's teriyaki sauce glaze and then I don't have to make a homemade teriyaki. So so yummy I love these things! I love that I found this recipe and somebody else that likes them as much as I do

    lol...remember when McDonalds offered Chicken McNuggets with "new" dipping sauces and one of them was the "Shanghai-Teriyaki" sauce. Shanghai is in China and Teriyaki is Japanese sauce.

    I ate a pile of these the other day that a friend of mine is famous for doing from time to time... Sooooo good!!
    However, he likes to use a different cut that few butchers seem to know about called flanken strip...beef ribs cut 1/2" thick or less. Apparently it's a much cheaper cut... but the flavor is absolutely outstanding!!!

    I don’t know about turmeric, but I know the ginger definitely tenderizes the meat. however, turmeric IS antibacterial, which is always nice in your short ribs

    You can also serve this with sticky rice and butter leaf lettuce rip the meat into the leaf with some rice and dip it in a mixture of soya sauce and sesame seed oil I worked with a Canadian Korean family when I was in my teens and this was a little barbeque treat we would have after work sometimes brings back great memories great culture great people

    Flanken cut short ribs are cut the same way but are usually much thicker. Another way to ask for Korean cut is Miami ribs 😉

    I use a boolgoog/kalbi type marinade on these and serve with my asian slaw: cabbage, scallion, cilantro, carrot, toasted sesame seeds, toasted slice almonds and a sugar/vinegar/oil dressing. I am after all the Tom Brokaw of my Asian coleslaw

    I used "riblets" for this today. You can find them at Walmart if you look for them. Applebee's really made a hit with these throw away pieces of meat. Very tasty and easy to cook.

    These are also called LA Galbi because this recipe was created in LA and galbi means short ribs :)
