- เผยแพร่เมื่อ 27 เม.ย. 2021
- Noodle master Kim Hyun-Kyu has been making his bright and colorful Grand noodles by hand for over 40 years. At his shop, he and his family make black, yellow, blue, white, and red noodles in accordance with Obang - or the five cardinal colors in Korean culture - by mixing wheat flour with ingredients like garlic chives, beets, rice, pumpkin, and more. For more info on the noodles, head to their website: link.inpock.co... or follow them on Instagram at @GrandNoodle ( / grandnoodle )

I'm not sure what's more enamoring, the passion he has for his craft, or the wealth of his scientific knowledge. Either way, what a master.
Yeah
What is enamoring?
@@joysjoys5711 enamoring = lovable or endearing
@@fetesha Thanks.
Faq off
You know, I've watch plenty of videos of elders describing their homeland food, but this is the first time someone could relate it to science elements.
bouncy food = chemistry usually
Them cutting the dry noodles is so freaking satisfying
As a Korean, I really appreciate what Eater does to present our cuisine to the world. thank you so much for your works
As someone who is not familiar with Korean culture, I am so grateful to Eater for this intimate view into a world I know so little about; a world rich with culture, history, beauty, and an amazing people. I feel like I was “gifted” this information. I will treasure it as I seek to know more about Korean culture.

Stop making everything about race
@@thedevilsadvocate6619 Nobody did but yourself lol
natasha begley everything is about race
What's common all over the world is...
Everything made by grandparents is delicious.
Well said.
@@md-sw6vm Because they sharpening their skills for so long it become a muscle memory. They knew which are the best ingredients because they tried all kind of ingredients and decided "this are the best ones"
That’s true
Absolutely👌
Because it usually takes decades and decades to achieve mastery, I don't know how that is surprised to you.
Nothing more beautiful than someone who's dedicated to their craft and truly knows what they're doing! Fantastic looking noodles 😱
Not only that, he shows pride and sincerity in what he's doing. Got to respect that, have to respect all these masters of different crafts. When you see the amount of work and effort that they put into it, one should not complain about the price because we ourselves do not have those skills nor patience to commit and do it.
You know rarely does the word beautiful apply to something like a drying noodle, but here it does.
@Porter Damien yeah, im sure people wants to pay 140 USD A MONTH for some shady streaming website, let's be honest, you are affiliated with the site so you might as well answer me this, do you even give access to the movies?

Dried Durum pasta from Southern Italy is another one of those rare beautiful dried foods!
Was anyone else just dying for them to boil the noodles to see what they looked like cooked and plated? so glad they did at the end!
they looked fantastic.
Yes
I like how he points out that they taste much different when force-dried. Makes it clear why he chooses the longer way.
From my current understanding of the process, By force drying it, you leave larger pockets of air where the water once filled, the sudden change in heat offer a short period of time may also change the formations of gluten or even break them, this would lead to an ultimately soggier, or crumbly texture after boiling, as water comes in to fill those voids as it is being cooked. the cold dry process allows the water still in the noodles to slowly evaporate which allows for the proteins to slowly settle and contract, leading to smaller voids which water can fill, this will lead to the noodles being much firmer and gives it elasticity as the proteins are not damaged by extreme changes in heat as they were drying..
The thing I love the most is how super country Korean he is. He is the heart and soul of what you think your "country uncle" is like when you visit family back in Korea. Also that moment where he points out how all Koreans have a high sodium intake (cry face). #saltaddict
Step one1. Make garlic chive noodles to get rid of sodium in the body.
Step 2. Add a mountain of salt into the mix.
The care taken for the whole process, including the beautiful packaging, is wonderful
I love how scientific the whole process is! This owner really knows everything about his craft and it's so amazing to watch!
This was absolutely fantastic. This should be like a paid HBO series or something. Well done
I love how well he explained the science behind every process, feels like i was there visiting in real life 😁
"We know because we tried everything. Our mouths are our labs" almost accidental haiku
not even close
Ye that’s not even close to a haiku
Nope
Haikus are Japanese. Also not even close
We know everything.
Because we tried it in labs.
Our mouths are our labs.
Here you have a haiku. More or less.
[Edit] I wanted to show that the sentence has haiku properties to it despite people thinking otherwise
Koreans are just resourceful people. Love them so much.
I absolutely love the passion that exudes from this guy. He loves what he does and that passion can been seen in his finished product! Great video...
Respect to the Korean OG. Took him 40 years to master this noodle making. Hope he passes this knowledge on to someone who will be as passionate as he is.
Koreans are just so often kind and dedicated to their craft. I love it.
Those colors are so beautiful! Plus the work and dedication that goes into the production process almost makes you feel like you're eating a piece of art
As a young food scientist, and a future distiller, I hope to have this much passion and experience when I reach his age. You can tell, he is a true master of noodles and how they are created from the ingredients to the bowl. What a pleasure to watch
This dude absolutely signifies loving your job and career. The way he talks about the properties of the food and what happens when it blends. Yeah you can totally tell he loves his job and what he's doing
I love that he talk in scientific terms. Good information is always good
Cutting the noodles look and sound so satisfying. The colors and care for the noodles are beautiful.
Our mouths are our labs.

오방색 국수중에 부추들어간 국수가 최고로 맛나요 ~~ 열무 비빔국수 만들어 먹으면 정말 맛깔납니다.
I love the fact that he loves what he does!
This is... Perfection!! The highest quality on a plate! Not an overhyped typical food but something with outmost care and years of experience
The literal axle grease on the rollers looks so delicious!
The salad and noodle combo, looks sooooooooo good, OMG!!! I take my hat off to the gents, yes Sir. 👍
A true master, with family support....just amazing!!
Everything in Korea takes years to master!
So much passion and dedication in what he loves that it becomes an art in itself.
What happens to those leftovers ?
I'd totally eat them.
I agree.. I want the catch tub of noodles
I was thinking maybe the workers split up and take it home for meals
I had the exact thought. I do hope they're eating it somewhere, maybe a special rainbow noodle with all the leftovers :)
No way they don't eat them
I was thinking the exact same 😄
5:22 this is soo satisfying!! What a passion.
This is just beautiful. What a joy to behold!
5:20 that drum beat as the noodle gets cut, kudos to the sound editor
🤣🤣🤣🤣🤣🤣🤣🤣🤣🤣🤣🤣🤣🤣🤣🤣😂
I like watching experts and masters of their craft/profession doing what they do flawlessly, making it look like its easy...
After crushing the garlic chives..the concentrated liquid after squeezing..store in a freeze and apply everyday on the scalp..works wonder for hair lost..though its smelly..new hair grows..apply and leave overnight n wash with plain water next morning.. chives is everyday kitchen item in Manipur, India
Beautiful skill!!
Awesome - this super noodles.
Korean noodles r awesome. All i c is the passion n love in this art made by grandpa .
선물로 받았는데 포장도 고급스럽고 맛도 최고에요 국수 별로 안좋아 하는데 거창한 국수는 오감을 느낄수 있는 국수갠적으로 들기름보다는 비빔국수가 좋아요
One of the most beautiful things that I've seen yet
As a Italian Canada chef i am super happy watching this video. I would leave everything I am doing and come make noodles with you any day

Wow!!! These are the most beautiful and colorful noodles ever!
I am from Malaysia and I enjoy watching your videos! Hope I can go back to South Korea soon. South Korea is a beautiful country!
Wonderful noodles! I feel a rumbly in my tumbly
"it helps eliminate a lot of the sodium in your body", continues to dump a bucket of salt on the chives
Because the salt activates the gluten. I think ar the point the salt is busy doing its job with the gluten perhaps it wont affect the body's sodium
My favorite series! Asian cuisine never disappoints with the amazing work behind it
Feeling very blessed that in this selfish world someone have humanity that they thinking about loyalty to the world making such a healthiest foods. Thank you so much sir being simple innovative blessed and healthy thought.🙏💐🍫

Just lovely.
Oh my God, when they plated it 😩👌 I wanna try it so baaaaad!
And man I gotta appreciate this man! Such a wide and broad knowledge. not only culinary-wise but also scientific.
The amount of work and dedication of each and everyone is astounding! Keep up the good work and you are truly the master of your craft.
2:17 There's a translation error. He said amylose not amylase. Amylase is enzyme in saliva and also in guts that breaks down amylose into a smaller form so that ultimately our body can absorb it in a form of sugar. I love how all the comments are about there's science behind his every process not knowing really what it is. haha internet hipsters.
I love his smile, 😌 the chopping was so satisfying. I want a box soooooo bad. 🌸
Man this Looks so good I love his enthusiasm and Pride in his work and he is very knowledgeable
This video to me represents the insisted perfection of a business that produces a product that is quality , beautiful and delicious! Although I have not tasted them, this video has me convinced that they are very tasty!!
Handmade noodles are the best ♥️
This is why I miss Korea so much the best 2 1/2 years of my life was spent in the Korean countryside of the city life interacting with the people as a soldier and as a civilian and I would go back in a heartbeat in fact less than a heartbeat I would go back it’s not a question the pride that they all take when creating foods to serve to the public it’s all taken with care customer service In the areas that I have been in have been beyond reproach
Sir your effort can be seen in the final result, great work👌👍
This feels like a cool chemistry class.
"Our mouth is our lab" What a quote with a big responsibility.
"Garlic chives remove salt from your body so its good for you"... proceeds to then add 10 cups of salt to the chives
The salt helps maintain the vibrant green colour too. Works for all green vegetables...
to be fair he's doing mass manufacturing and every portion probably only gets a tiny bit
sodium = salt
He said sodium is activated in the body not salt. Table Salt is sodium chloride not sodium.
@@geneal1989 are you dense
"Our mouths are our labs." Beautiful!
I am so impressed from thier dedicated works...
