As for personalization, make mine one batch with black truffles and another batch with white truffles. Maybe a batch with anchovies, one with smoked salmon, one with espelette pepper, one with smoked paprika, one with chestnut honey, …

I am in Portugal, where cream and butter are of poor quality or non-existent. I would pay anything to have this butter available for cooking and baking, and I know it would enhance everything I do.
When he spoke about oxidation I thought why would anyone want to degrade their product, but like all finer things I guess it's just a small percentage in the process to develop more complex flavour. It's still weirdly interesting how some prefer funky flavours over clean ones (Yes Blue cheese I'm thinking of you!)😅

Note that this is salted butter, which is very popular in Brittany (where this producer is located). As a kid, we had a Holstein cow and made our own with a hand churn. Bright yellow, didn't kneed it but turned out great. Mom made homemade bread too. The smell was heavenly.
I spent $40 just to get a special order of Bordier butter from my local artisanal fine foods supplier because I really wanted to try it. It tastes different for sure. The texture is melt-in-your-mouth and putting it on a good baguette is just simply heaven. You don't need anything else for your meal. But the flavoured ones definitely have a strong taste, especially the seaweed butter - it's plenty salty. I'd say it was worth a try, but not so feasible for regular consumption unless it's easily available to you. And this was half a year ago, it wasn't all that memorable until I stumbled onto this video again and decided to recall what it tastes like.
You should. Bordier butter is rallye really good. And you even have special recipe like pepper butter or yuzu butter. It's quite pricey but worth it 😋 - A french guy
Gloves are a fallacy. They incite people to be lazy about hygiene. A study in the US showed that sandwiches prepared with gloves have twice the risk of being contaminated compared to those prepared with bare hands.
There is no dirtiness difference between gloves and hands the moment you put on the first or wash the second. And often, workers with gloves tend to not change it very often.

Maybe a batch with anchovies, one with smoked salmon, one with espelette pepper, one with smoked paprika, one with chestnut honey, …
As a baker, I know that the quality of every ingredient affects the final product. Butter may be the most important ingredient. I would love to try baking with this butter.
“Everything is done by hand”
Immediately shows the butter being churned in an enormous industrial machine
Went straight to the shop to purchase this after watching this, just tried a little and it is OMG so nice! Love it so much! Thanks for sharing!
I am so impressed and full of admiration. These are trues craftspeople, who produce wonderful, life-enhancing and delicious butter. I am in Portugal, where cream and butter are of poor quality or non-existent. I would pay anything to have this butter available for cooking and baking, and I know it would enhance everything I do.
Great real video. Loved it. Thank you.
When he spoke about oxidation I thought why would anyone want to degrade their product, but like all finer things I guess it's just a small percentage in the process to develop more complex flavour. It's still weirdly interesting how some prefer funky flavours over clean ones (Yes Blue cheese I'm thinking of you!)😅
cette histoire est bien la magie du business bordier . faire du "beurre" avec du beurre . limiter au max le rancissement mais à 35 e le kg . je préfère les beurres traditionnels provenant de lait bio en petite production à 16 ou 17 e le kg .
Note that this is salted butter, which is very popular in Brittany (where this producer is located). But outside this area non salted butter is generally more popular. This is because, historically, Brittany was exempted from the salt tax ("la gabelle") and therefore did not fear to put salt in butter to make it last longer.
French butter is absolutely very delicious :)
Suddenly 8 year old me who eats bread and butter at every meal is making me want to take a little trip from New York to France...
u can order this in US
Try this french Butter with handmade German bread which fresh from the oven and it is still warm…
@@maxk.9976 ah so close, french butter with french bread.
@@maxk.9976 Germans always think their bread is the best lol
@@moussesucree na come on.. we German don’t have much. Please let us have good breads xD the only thing we have xD
We have done so many bad things to the world in the past, so let us give you the world good bread at least 😭
I would definitely love to spend a couple hours watching the operation of this butter factory in person.
I didn't realise M. Bordier had retired. What a great company, whilst some of the scientific claims are dubious, it doesn't actually matter, because the final result is a supposedly great product which I would love to try one day! If there is an artisanal butter, this is it!
I'm from New Zealand one of the biggest dairy exporters in the world. I had no idea. Thank you so much
Man, betcha handling all that butter these guys never suffer from dry skin on their hands lol 😂
I've never wanted butter so badly in my life.
Lol
These truly are Exotic Butters
I hope they keep producing for decades to come
Wow, this is stunning! I'll travel to Brittany soon, I'll make sure to try this butter.
The world needs more of this type of skill, tradition and craftsmanship.
Amazing! I love butter!
Butter
Will need to try and get a hold of some of that somewhere, looks magnificent.
does it? its just butter
@@courgettee No, no, no, no, no courgette, my wee YT friend, it's magnificent butter, butter of the gods and from the gods, look at the care and attention..........go on, try and get hold of some, pot some on a roll, or baguette with either nothing, or some sliced fresh tomatoes and salt and white pepper and then return with your findings :) x
Hopefully there’s a European style store in your town, we have one in Fairbanks, Alaska, aptly named Eurostyle.
If only I could find this butter locally! I found it online, but its $14 for 4oz (128g) 😥😥 I'm sure it's worth it though!
Wow that s expensive indeed
I think il s around 3,50€ here, which is now the price for an average 250 g butter
That's pretty expensive to butter your toast with.
Local butter would still be expensive.
Not going to lie, if you like butter, it’s worth it.
Bless these food heroes. PS a fresh baguette and this butter is ALL you need in life, spectacular.
He got me ready to churn my own butter.. the process looks like art
The right guy to lead the business after bordier retired.
I just got recommended this, and I remember Regional Eats and their video with Jean-Yves. I was disappointed to hear that he retired, but I'm glad he was able to bring a leader with the same love as his own.
I need to try that butter.
You call it "fancy" but let's be honest... this is REAL BUTTER
As a chef i become goosebumps from seeing the passion and master level of craft♥️
When it comes to food quality and standards, France puts us to shame. Respect to Bordier for using methods that create passionate, knowledgeable employees who are driven and take pride in their work.
seaweed butter lime and scallops sounds amazing! 😍
Yuzu butter, wow, that sounds amazing.
I wish I had some of your butter, love the way you work with your workers. Also beautiful products.
As a kid, we had a Holstein cow and made our own with a hand churn.
Bright yellow, didn't kneed it but turned out great.
Mom made homemade bread too. The smell was heavenly.
I started churning butter at home in a Kitchenaid. I'll never go back to industrial butter. Even doing it as an amateur, the difference is incredible.
Absolutely fascinating.
I’m an Irish butter girl myself. But that butter looks amazing
Irish butter is the best we can get here in Colorado and it's damn good. Wouldn't mind trying this French version but may not ever get the chance.
Butter is God telling us there's hope in this world.
For a good baguette you need to be in France or have a frenchy around with the knowledges
Nothing like a craftsman doing something by hand to make my day.
I LOVE watching any traditional or artisanal process. We have lost SO MUCH in the United States. It is devastating. 😞
You can't lose something you never had.
4:00 What if arm hair falls into the butter during the kneading process?
Cope
9:13 "No one should spend the whole day in the same job"
j'adore ce beurre, j'en achète de temps en temps. il est délicieux
I prefer raw cream butter (also from Brittany), but the taste of Le Bordier (yuzu) is quite amazing.
As a french, I agree with you
Hand sweat adds flavor.
Take ur soy meds Kevin
I feel the urge just to eat it all
You should. Bordier butter is rallye really good. And you even have special recipe like pepper butter or yuzu butter. It's quite pricey but worth it 😋
- A french guy
You have to love France.
Love that they rotate the employees through the stations!
God I'd love to baste a steak with that butter and try it on its own too 🤤🤤
so fancy butter is touched by none gloved hands none stop
I worried that he didn't wash his hands after eating the butter off of his thumb.
