The so-called Fijian and Trinidadian recipes are similar because the Indian people living in India were forced into labour in Trinidad and Fiji, uprooted by the British, and these Indians came from the same state in India. In reality, the food is still Indian not any other name.
You’re right about the history but these foods are prepared differently than those in India. So yes, while the root of these dishes are from India, they aren’t Indian. They share similar ingredients with Indian curries. But they are Fijian and Trinidadian.
Let me clarify here , all Indians taken to Fiji and Trinidad were not from the same place . One has to remember some Indians migrated to Fiji and Trinidad way after the initial indentured system. My family for example, my father’s background is from Telangana and my mothers background is from Kerala so the fusion of Kerala and Telegu style of cooking and spice combo is amazing.
I’m married to a Fiji Indian and it’s a bit confusing trying to follow. You don’t tell the amount of ingredients to put and your timing to put ingredients keep changing. I really want to impress my husband and not push him away with my cooking following your recipe

Yes! Fresh peppers lend such great flavor! I can typically grow them until winter strikes. I’ve made paste and hot sauce too. Love spicy!
