Soft and Fluffy Orange Loaf Cake | Quick and Easy Recipe

  • Orange Loaf Cake
    2 ¼ cup of All Purpose Flour
    1 tbl sp baking powder
    Pinch of salt
    1 ½ cup of granulated sugar
    2 tbl sp of orange zest
    ¾ cup of butter (unsalted)
    3 tbl sp vegetable oil
    3 eggs
    ½ cup fresh squeezed orange juice
    ½ cup whole milk
    Frosting/Glaze
    ½ cup powdered sugar (sifted)
    1 tbl sp whole milk/orange juice/water
    Directions:
    Bring all ingredients to room temperature.
    Preheat oven to 335 degrees F. Line an 8 1/2 inch x 4 ½ inch loaf pan with parchment paper.
    Sift flour, baking powder, salt, and set aside.
    In a medium/large bowl add granulated sugar and orange zest. Rub orange zest into sugar using a spatula. This will help to release the oils from the orange zest and to be absorbed into the sugar.
    Add butter and mix until light and fluffy.
    Add vegetable oil and mix well. Switch to a whisk to incorporate air into the mixture.
    Add eggs one at a time and whisk until smooth.
    Add ½ cup of freshly squeezed orange juice and mix well. The mixture may curdle, but that’s ok. Keep going.
    Add half of the flour mixture and half of the milk. (Repeat again). Mix gently until combined. At this stage, take extra care not to over mix the batter, as it will result in a dense cake.
    Transfer the batter into the loaf pan and smooth the surface. Bake for 1 hour.
    In the meantime, make the frosting/glaze (optional). Mix the powdered sugar and milk/orange juice/water until combined.
    After an hour, remove the cake from the oven and allow it to cool for about 20 - 30 minutes.
    Drizzle the frosting/glaze over the orange loaf cake and allow to set.
    Slice, Serve and Enjoy!
