They taught us a trick in culinary school. 2 ping pong balls and a quarter. Thumb and pointer hold 1 ball. Thumb and middle gold other ball. Quarter in between the balls. The motion you make to drop the quarter is the cracking motion you make with your hand

If you’re not pushing the thumb too far, but just enough to get a grip on the bottom part of shell, you shouldn’t get shell in since you’re essentially pulling the top and bottom away from each other rather than pushing your thumb, which could have shell bits in it, into the egg

I do it differently, I just crack it and use my thumb and my index finger to pull one half one way, and my middle and ring fingers to pull the other half
Try that with organic eggs. There's a huge difference in the thickness of the shell. It's why I buy organic. Non organic eggs seem nutrient d deficient.

This is def a good way. However they way I do it is super reliable and also my hand stays relatively egg free
If you get a good crack, you can also pull it apart between your fingers and thumb.
