To help the egg white cook more evenly, try this before flipping. Cut slits in the egg white close to the yolk and spread it a little and allow the runny egg white to fill in the hole you just created. My mom's been doing that for 80 years.

I don't bother flipping eggs anymore. My hubby likes his yolks soft so he can dip his toast but wants the whites solid. I never knew this method of cooking eggs existed until I got a job working in a cafe. The cook showed me how to make what's called a BASTED egg. She put the eggs on the greased grill and then shot a little water on the grill next to them to create steam and put a lid over the eggs. I do this at home with my non-stick pan. I put a little bit of butter in a small pan, add 4 eggs, and then a little water (1 TBS. or so) and then put a lid on the pan. As the eggs cook the water creates steam and that will cook the tops of the eggs whites. It's so much easier to do than trying to flip an egg.

"Monk cook", I am Luís and I am writing to you from Spain. We all know that it is not necessary to have a Michelin star to fry an egg, fry an egg with plenty of extra virgin olive oil, and "turn the egg as you do", that is a "crime". A fried egg that breaks the almost liquid yolk, a freshly baked potato, a warm and crunchy bread and dipping the bread in the yolk, pure orgasm.

Cute video. A couple of observations from someone who’s been doing this for decades. Use a round bottom pan without an edge. Nonstick or stainless steel won’t really matter. Use plenty of butter, the eggs should be swimming in it. you want a little bit of air when you flip it if you just roll it at the edge of the pan your risk curling it. Correct if you go too High it splats but too low you get a folded egg. You shouldn’t need a spatula and you should never clean the pan with anything but a paper towel.

It helps to have a properly shaped pan. The one shown has a corner between the side and the bottom. A gentle curve works better. A smaller pan is better as well, because you have better control. If you use a 7” pan, the whites of two eggs will merge, and when they set they can be flipped as one.

I don't "flip" my eggs. Instead, I cover them and let the top steam. Alternatively, I do what my mother did and cook sausage or bacon first, keeping the grease. I then introduce the egg(s) and use the spatula to splash the hot grease over the top of the eggs, cooking it.

How often do you fry one egg? I usually have anywhere between 2 and 6 eggs in a pan, NEVER just one. Show me how to flip 6 eggs in a pan. Fail.

Up the heat a few seconds to reduce friction before you flip the eggs, then back to low heat to finish. The friction from lo temp can tear the egg.

Thanks, Gastromonk. On the subject of omelettes... personally, I prefer light and fluffy. I don't want to sound like a broken record, but I like the WH method of aerating your eggs in a mixer before going to the pan. The biggest mistake most people make at that point is adding ingredients like onions or mushrooms or whatever to the eggs in the pan and then flipping the omelette. This is more often than not a disaster. I always liked to flip the omelette then add the ingredients between the folded omelette. You end up with an omelette that looks like the picture on the menu. Of course, by definition you can't do this with a flat grill omelette. To my way of thinking, a flat omelette is just an "unscrambled" scrambled egg.

The secret is in the wrist. I learned the truth of this secret while working in a restaurant in Moriarty, New Mexico on Route 66 in 1965. The breakfast short order cook taught me. The simplicity of the secret is profound. Place a piece of bread in the pan you'll be using and flip the bread in it. Practice it to unlock its secret.

+GASTROMONK.COM hi, why you need to flip the egg? does it taste better when you flip or is there other reason? because l never flip eggs so is that bad to not flip it?

HI Skein, like my buddy would always say - "there's no wrong way to eat a Reese's peanut butter cup" meaning that in the end, you eat them the way YOU like them and that is THE best way. The flip is simply a technique designed for speed and efficiency in the kitchen. It is a repetitive motion that we chefs will do literally hundreds of times a day. Flipping an egg (i.e., vs. sautéed vegetables) demands a higher level of finess from a cook and is often used as a test. It is not bad to opt out of this technique. However, you have to be mindful of a few things 1) no brown anywhere on over easy 2) no broken yolk 3) fully set whites and raw yolk. Have a great day Skein and keep on cooking!
