How To Make Barbacoa | Barbacoa de Res | Slow Cooked Beef Recipe

  • Here is the way I like to make Mexican barbacoa at home. I put all of my ingredients in the Crock Pot overnight and wake up to tender fall apart barbacoa. As a kid, I remember waiting in a line out the door at our neighborhood Mexican meat market for fresh corn tortillas, menudo and barbacoa. You can make barbacoa tacos dresses with your favorite salsa, fresh onion, cilantro and a squeeze of lime for the perfect breakfast taco.
    INGREDIENTS
    2 bls beef cheek meat (stew meat or beef tongue work too)
    2 tsp salt (1 1/2 tsp if using fine table salt)
    2 to 3 cloves fresh garlic
    2 bay leaves
    1/2 small onion
    5 to 8 drops of liquid smoke (optional)
    2 tbls water (optional - to combine with liquid smoke)
    CROCK POT

    Crock Pot
    Cook overnight on LOW for 12 hours
    OR cook on HIGH for 8 hours

      Lol! My grandfather always told the stories of his life on the rancho in Mexico. He would talk about how they made true barbacoa...as we stood in line at the meat market to get barbacoa. 😂I'm like, times change abuelo and the neighbors here in the city don't want you cooking meat in a big hole in your yard.     So many memories flooding back. El Ranchito, in Zillah, WA. We would get 1/2 lb of barbacoa and dozen warm tortillas and eat it on the the patio. I still make this. Thank you....I love your show!

    I haven’t had barbacoa since I lived in San Antonio. I made this for cinco de Mayo 2019 in California. It came out great!! It took me right back to Texas, all I was missing was some ice cold big red!! Thank you for sharing this delicious recipe! I hope to make this quite often now. I also made your tomatillo salsa and it paired perfectly!!

    Don’t be fooled by the thousands of Barbacoa recipes on the internet. This is the one and only true recipe. It’s authentic and delicious. If you read a recipe and it says to use chuck meat or is a Chipotle copy cat, leave a nasty comment and move on jk ;) Seriously though, this is the best barbacoa you’ll eat. It is exactly what you’d find at a tacoteria in Texas. Thanks for sharing the knowledge. Beef cheek meat for the win!!!!

    Wow, this hits close to home because you’re describing everything about here in Texas going to the butcher shop and standing in line and ordering the barbacoa,carnitas!!! Also remember my grandpa and his stories of saying “back in my day we would do the barbacoa from scratch” stories
    I can hear my uncles saying “para la dieta” hahaha

    Thank you so much for sharing Guchujang Mama. I just wanted to let you know for any of you that would like to try cooking this a faster way, you can cook this in an instapot on manual for 36 minutes, just wait 10 minutes for the pressure to naturally release. I tried it with 2 cups off beef broth, & it turned out PERFECT! Less than an hour! I made mexican rice on thd stove top while I waited for it to cook.

    Omg!!! I am a taco addict. I fell in love with Barbacoa the first time I had it. I didn’t know what it was, I just knew it was tender, shredded beef. Ever since then, I’ve always looked for it on menus at different taquerias. None have been as good as the first place.
    Then I stumbled across this video and have been eyeing it ever since. But I didn’t pay attention to the packaging in the video and just assumed the recipe would be expensive. I finally went and bought the ingredients for like $10 at a Mexican grocery store (beef cheek is harder to find in the Detroit, MI area).
    I followed your recipe (almost) exactly. I added a sprinkle of adobo and I had to add water as it was cooking because my meat didn’t produce enough liquid. But still, THIS WAS THE BEST BARBACOA EVER!!! It was just as good, if not better, than the restaurant I get it from. I just made this yesterday and I’m already thinking about making it this weekend because I didn’t get enough meat.
    THANK YOU SO MUCH!!! I will be trying more recipes.

    Yes, it's 1:30 am, and I have barbacoa in the slow cooker set on low for 12 hours. Fellow Houstonian here too. Husband and I LOVE your videos. So simple and you explain so well. So I got this in the cooker about 12:30 am, so about noon-ish tomorrow, we'll be eating great barbacoa (fingers crossed I did it exactly as you showed). I can't wait to wake up to the house smelling wonderful.

    I remember Daddy going to the carniseria on Saturday to pick up a head for Sunday breakfast. Me and my siblings loved the barbacoa and Daddy loved his cecos and eggs. And the house smelled like heaven. It felt like Christmas morning. 💖 Thanks for the memories. Another great video!

      That's a trip, in Rome, rented a house below Guadalajara for 6 months, loved Jalisco I was near Ajijic & had a avocado tree in the courtyard. Great are, loved the people & the food, omg! Jamual sounds like Rome was fun as well.

    Finally, finally! I'm not Mexican, but I love me some Mexican food. I lived in a small town predominately Mexican and Filipinos. I too miss eating this on Sundays with my friends.     Carmen’s Barbacoa in Brownsville, Texas is the only place in Texas where barbacoa is still cooked in the ground. It is the only place in the state still licensed to cook it in the ground. Absolutely delicious!

    My mom used to work at the Matamoros Meat Market on Irvington back in the day, that's where she met my dad and I always drive by Gerardo's on my way to work but just didn't know if they still sold barbacoa.     Finding your channel is like falling down the rabbit hole. I’m completely addicted to it and all the childhood recipes I grew up with in San Antonio. Thank you for helping me share this with my husband and son! I, unfortunately, did not get to serve them all these yummy dishes before I lost my mother and grandmother.       How wonderful! I always wonder how people come across my channel. Glad you found your way here and what a wonderful way to remember loved ones. I lost my Dad 3 years ago and one if the recipe videos I have for an easy Mexican rice was the way he made it. It's not authentic by any means and you'd be surprised by how many hateful comments I get because I am not Mexican enough, my Spanglish is bad or the way I cook is not authentic, but comments like yours make it worth while. My cooking might not be authentic to some, but it was delicious food I grew up cooking that reminds me of my relatives. Thank you and thank you for trying out my recipes. I truly apprecate it. 😊💖

      I fell down the rabbit hole yet again.
      I live in Tennessee but was born and raised in San Antonio. I literally just got back to Tennessee today after being in SAT for my Godfather’s 100th birthday celebration.
      Of course this Texas girl had to shop at all the HEB’s she passed! I bought beef cheeks and lengua to bring home. So I now need to rewatch this to make barbacoa.

    This is a most informative and helpful video. I plan to make this recipe this weekend. I appreciate the nostalgia and great memories you invoke about how my familia used to enjoy barbacoa with fresh corn tortillas and salsa on Sunday mornings at guelita's house. My father would buy this delicacy from the local tortilleria and welcome the entire neighborhood while we watched the Domingo Pena show on TV.

    I'm from Arizona originally small town Buckeye. I grew up there. Grew up camping out with family members around the fire pit with family making sure the coals didn't go out. So worth it. Tacos and caldo de cabeza OMG yesss.

    Love the Houston shout out. Born and raised here. I purchase Barbaqua almost every week for years at Celaya Meat Market on1960 and Jones Rd. Never dreamed I can make it in a crock pot. I've done the whole head before in the oven. Your method is a lot easier and less work. Will suprise the family at breakfast next week. H.E.B have 4 pounds ready for me here I come LOL

    You and I must have the same abuelito. Barbacoa is my favorite meat. I too have loved it since I was little and had it on weekends as well. I have never been able to know how it has been prepared. There are only a handful of restaurants throughout Texas that know how to prepare it.Thank you, thank you, thank you for the video. I am going to go and prepare it your way to see how it comes out. I love Barbacoa. And I never figured it would be this easy to make.

    I’ve never made this. I always thought it would be too complicated. When we’d visit family in Mexico, my dad would do this up by burying it in the ground. I can hardly wait to do this! Thank you so much 😊👍

    I’m originally from Brownsville. I live in DC now and I saw beef cheeks at Sam’s club here last month. I bought them and made them and was immediately transported to Sunday mornings in the Rio Grande Valley. Good stuff. One of my favorite things to make now.

      Houston too, but in E. Tx right now, I use to go by Taco Cabana at Shepherd & 610 & get breakfast tacos, eggs with Barbacoa, guess that's why was sleepy during the mornings. lol Need to get back & see all the changes made in Houston, especially the Heights where I & my Moms Family are from.

      every mexican american in Texas i know only use a cows head wrap in foil or oven bags put in oven at 250 for 6 hours been making it for over 50 years now 68 if you like use onion, cilantro, dice tomato or use chunky salsa from walmart after cooking it use flour or corn tortillas. Barbacoa is mostly a breakfast taco dish.

    Now this is my kind of barbacoa..you know GM this is exactly the barbacoa we grew up eating and still eat to this day and I'm 59..and just like you said, on Sunday waiting in line to buy a pound or two of barbacoa with fresh corn tortillas and hurrying back home to enjoy a beautiful breakfast with family mmm..I live in South Texas and this is our preferred barbacoa de cachete de res..this is why I just love your channel GM because we have a lot in common..sometimes your videos make me emotional because your childhood stories are similar to mine and they are near and dear to my heart..and still I go on sundays to buy barbacoa and enjoy it with my grown children and my grandchildren..I'm a young grandma, wink wink..love you girl ..God Bless..❤️🌈🙏🏼

    When we were stationed I texas was the first time I tasted barbaqua. It was so tasty! We now retired to NM and make it at least once a month.

    I remember as a child sitting quietly and patiently waiting for church service to end so we could visit our local bakery for some fresh hot corn tortillas, some pan dulce and yes some BARBACOA with salsa... thanks for sharing!!!

    I really enjoyed this video! When I was a boy (that was a very long time ago, 1950's and 1960's), an old man would drive through my neighborhood in San Antonio selling Barbacoa from the back of his old car (1940's Mercury). Good Memories!

    Barbacoa everyday for breakfast is the best way to start the day. A street taco truck parks in my favorite grocery store AND every time I'm in town i get all the barbacoa meat she has for breakfast for my daily taco fix. She also makes this green sauce that is out of this world and is sounds just like yours. Now I just have to find beef cheeks in this part of Texas to make it myself. I have seen another one of your videos that you used chunks of beef to make barbacoa I might have to resort to that choice myself. Thanks for sharing your knowledge of the best food recipes online.

    I have watched this video again and again. One can find a variation of this technique in every indigenous culture: Indonesia, northeast of Brazil, the Pampas of South America, Mexico, Hawai and so on. Bury your food on a rock lined hole, a layer of hardwood coals, cover it with banana leaves and aromatic leaves, build a fire over it and let it slow cook the whole day. Of course in Mexico the indigenous people have developed it to a science. You have found a very interesting way to do it at home on the crock pot, which, when we think about it, it is physically “the whole on the ground”.
    When I smoke brisket, pork shoulder, etc, I save the liquid on the drip pan, remove the fat and concentrate the wood flavorings present. I freeze that and use to flavor dishes on the crockpot. I am going to look for cheek meat on the local Latino áreas tomorrow. Well done. Thanks for sharing such interesting recipes.

    I made it last night. Put the che🎉ek in the crockpot for 12hrs on slow. I used Julio's seasoning salt and everything else the same. It was ready for barbacoa breakfast. It came out so good. I will be making this again soon. From San Antonio, Texas Heritage far westside!!

    Every barbacoa recipe is so different! I didn't know it could be this simple! I have a mixture of chili powder, cumin, oregano, lime juice, beef stock, tomato paste, and apple cider vinegar, in addition to what you have here. I just put it into an oven since I don't have a slow cooker. I hope I didn't add to many different things :-/

      I love how you made your barbacoa and definitely everyone has their own way on the kitchen. The way I made mine was to recreate the barbacoa we used to get at the local Carnecerias in Houston TX. 😁

    Oh goodness. I’m craving this so bad! Matamoros was where we used to hit when we still lived in Houston. After we moved to Alvin we would get homemade barbacoa. We lived on a farm in Alvin, mostly chickens but an occasional pig and larger animals for cooking. I’m 52, but the memories are like yesterday.

    I grew up eating beef cheeks floured browned and simmered in its own gravy for hours, I made a special trip to pick up some cheeks and they are in the crock pot now for tacos tonight the night before Thanksgiving. I think this will be a new tradition for the coming years. It smells so good in my house right now. Have a wonderful Thanksgiving.
