I guess you could just bake it. I already made cauliflower in the oven (even though it'd been a bit more chunky), and somehow it got quite steamy inside there, so the cauliflower was really tender and slightly crispy around the edges. It may be possible that putting salt onto cauliflowers causes the cells to break and release moisture? Maybe Ben has another idea, but in case not: Try the oven at 180-200°C until the cauliflower tastes fine? :) Good luck!
Maybe you should try to steam it. Put a pot of water on the stove, then above it the cauliflower in a bowl that can take the heat with the clingfilm. ?
Could i use chicken instead? Like chicken stock cube and then chicken breasts? Would I then let the chicken poach in the sauce? If yes, for how long? :-) That was a lot of question marks! :-D but thanks for another great video.
Kind of curious though, why cut fat from low carb diet? With low carb diets, you need lipids to a) replacement source of energy, b) to provide adequate amount of energy with just protein, it will put a lot of strain in the liver and other organs, c) fats can be burned with ease-with some adjustment- in brain and other pro-glucose organs.

Looks great. You could also do the lamb in a pressure cooker after the initial searing to get the same braised effect in less than an hour.

I believe dry pan frying the cauliflower would work too (: your main goal is to draw out some of the moisture and cook it so it isn't raw
Our microwave is 800watts... that works fine.
You can always just steam the cauliflower... will be similar.

try the raita with some chopped onions and lemon juice, also you can eat the curry leaves, its good for you

The microwave was just used to steam the veg so use a regular steamer

remove the lid from the pot and put the bowl right on it. the steam from the "curry" will heat this up.
