    How to Make Amish Mustard Pickled Eggs
    INGREDIENTS:
    12 hard boiled eggs
    1 thinly sliced medium sweet onion
    Mustard Pickling:
    4 cups water
    1 cup white vinegar
    1 cup sugar
    1 tbsp. kosher salt
    3 tbsp. prepared mustard
    1 tbsp. mustard seed
    2 tsp. turmeric - OPTIONAL
    Combine above ingredients in a medium saucepan and
    bring to a boil. Simmer for 5 minutes and remove
    from heat to slightly cool.
    Place hard boiled eggs and sliced
    onions in lidded jar/container.
    Pour mustard pickling mixture over eggs and onions.
    Place in refrigerator for 10-14 days.
    Give a swish every day to make sure everything is
    coated.

    For as long as I can remember, one of my favorite treats was to just to put a hard boiled egg on a fork, dunk it straight into the mustard jar, and chow down. How is it that at 50 I'm just now hearing that something like this exists? You SO rock!

    I made these for the first time a month ago, and I can't get enough! I have three jars of the mustard pickled eggs in my fridge. The only difference is that I used different types of mustard (regular, deli, and brown, the deli mustard is my favorite to use). Thank you for this!

    I use this same recipe with added pepperonchins plus a little juice, 6 whole cloves and pickling spice. They taste like deviled eggs. They’re so good!

    I have pickled eggs in my whole life and then I moved to the UK. Sarson's malt vinegar can be found in all grocery stores now I buy it online by the gallon and it is seasoned. It makes delicious hard boiled eggs I want to make mustard hard boiled eggs and I also love pickled beets eggs and onions! I will drink all the liquid as well I am just a pickle freak hahaha! :-)

    These are delicious. They were perfect after 11 days in the refrigerator. I made egg salad with just them and mayonnaise and we ate it with buttered saltines and marinated artichoke hearts on the side. I’ll be making these regularly. Thank you for this great recipe.

    HI Tess, wanted to give you an update. These are amazing! I made these exactly according to your directions. I was concerned about the low amount of vinegar, but that was not a problem at all. These turned out so good! This is great for preserving all the eggs I get in the spring from my chickens. Now all I need to do is grab an Amish mustard egg when a recipe calls for hard boiled eggs. These also make great egg salad sandwiches. Not to mention just snacking anytime. Thank you for sharing! I will be making these over and over again!

    Tess....PA Dutchboy here from Lebanon originally. :-) I notice some of your egg whites get dinged from peeling. I came across a method online that works great...you just use a small or medium jar...fill it halfway with water and put an egg in and lid on and shake it for 5 seconds....the water acts as a buffer and loosens the shell and when you drop the egg out you rinse and peel it under running water and the shell comes off easily. Give it a shot. Don't shake too hard or you'll split the egg...once you do it a few times you figure out the proper energy . I'll check out your other PA Dutch recipes also.

    Turmeric is extreamly healthy. Try the brine on a salad! Or even pre-soak chicken or hamburger in the brine. Wow!

    I've found turmeric tends to clog the pores of the eggs and not allow the flavors of the other ingredients to get into them. It adds some color and a little bitterness but I would suggest adding it a week or so later if you are refrigerating the eggs and not going through the canning process. Yellow mustard also has turmeric in it. Try using Coleman's dry mustard instead.

      James Crow: Yes, use dry mustard if your want a smoking crater where your sinuses used to be. I know egg shells have pores but albumin? News to me.

    Excellent brief tutorial on pickled eggs. Finally a video on this subject shorter than 10 or 20 minutes watching inept people boil & shell eggs & then go on & on while fumbling with the pickling ingredients & slicing onions. Big thumbs up! Thank you for this practical, informative & painless demonstration.

    Wow, those look amazing!
    To me, the eggs with the turmeric looked better. You did catch me by surprise when you said 10 to 14 days. Goodness does take patience I suppose.

      +Tango Joe ---and you really do need to wait that long when making pickled eggs. You have to give the eggs time to soak up some of the brine so they have that delicious pickled flavor deep into the egg. I suggest trying the Pennsylvania Dutch style pickled eggs with beets too if you haven't tried them before.

    They look FANTASTIC. Just curious -- wouldn't using ground mustard have the same effect as the turmeric for color?

      Ground mustard is actually more brown than yellow and is HOT. Prepared yellow mustard is colored iwth turmeric.
