      You can simply make a salt brine like any other lactoferments, submerge the cooked salmon in it, and let it sit out for a few days until your preferred sourness! I use 1.5tbsp of salt per 500ml of water. Coriander, peppercorn, and other spices and garlic could be added for flavor.
