      @@masterphoenixpraha Some water evaporates, some is absorbed by the psata and the starch from the pasta acts as a thickening agent.

    Thank you a lot Donal for letting people know pasta with nduja souce. Personally I cook it in another way, this is the "grandmother taught me" version:
    1) Boil water in a pot. You will put pasta in it later, once the water is boiling.
    2) In a separate pan put olive oil and a finely chopped onion and , if you want, carrot and celery. This is called soffritto.
    3) Let soffritto go with minimum of flame for 5/10 minutes, always being careful that onion doesn't burn, keep mixing with a wooden spoon. When onion becames translucent, add tomato souce and adjust with salt and black pepper. If the souce is too acid, you can adjust with a little bit of sugar too, personally I never do this. Now set the flame at medium but always be careful that the souce dosen t attack to the fund of the pan.
    4)Now the water in the pot must be boiling, so you can put a handful of salt and pasta in. Be careful when put salt : if the flame is at maximum the water could spill out, so set the flame at minimum, put salt and set it maximum again. Then add pasta and cook for 10 minutes.
    5) Use another spoon or a glass to pour a little bit of the boiling water in the souce. This make the souce cook slowly without to attack to the fund of the pan. Now put nduja in the pan and mix with the spoon in order to make it melt in the souce . Nduja can be eaten even without cooking it, it is already ready to eat meat and pepper. It gives taste and spicy to the souce. Watch the souce and mix with the wooden spoon to make the nduja completely melt in the souce.
    6) If you think the pasta is cooked and salty drain it with a colander. If it needs more salt, put salt. Put the drained pasta in the pan with the souce, set the flame at minimum and keep mixing for 1/2 minutes. If you want can add chopped mozzarella or smoked scamorza now. 30 seconds will be enough to make it melt.
    7) Serve with basil and cheese on top of it (parmigiano or pecorino cheese, it depends on what you like).
    8) Enjoy :)

    Im fasting and this looks beautiful! Seems like it would be the perfect quick but tasty fix to break ones fast! Yummy! Can’t wait to try! I wont be able to find nduja that is halal so i will use regular non-pork chorizo instead!

      Just a heads-up, Beef Nduja does exist, it's just a little rare, you might even be able to order it depending on where you live

    WOW!! Has to be incredibly delicious!! Don't know if they sell those kind of sausages here in the US or the tomatoes, I've seen the dried tomatoes but they look dry, not kind of soft like the ones you add. Looks divine, loved it, I love pasta with anything.

      Hi. One option is Miyoko's Creamery [vegan mozz]. I'm in Northern CA., and we have The Butcher's Son for vegan dairy alternatives aka"cheese". To manage your expectations: neither has the exact same flavor or texture as cheese, but they are good options.

    This is not a salumi. Salumi means muscle. This is a soft salami (Calabrian). Fantastic presentation. I would want to be sure I did not add too much water so that I’m not over cooking the pasta. But if you say a liter and a half, I might try that first. You’ve made me very curious. Thank you!

    😂🤣 yes Italians are so frickin picky about their food. I should know...my Italian parents, aunts, uncles, godparents etc were all huge food critics. Drove me nuts growing up. I think this one pot pasta meal is great and will try it minus the sausage when I’m in a rush to cook supper. By the way, your comment about Italians made my day....I subscribed just for that comment. Keep it coming.

    Is nduja readily available in regular supermarkets? Is there a more common substitute that could work?

      You can get a 200g jar in the italian section of larger Marks and Spencers for £4, or £4 for 90g in Waitrose. Sadly I've not been able to find it anywhere else so I stock up when I go to M&S! So worth it, sooo good on pepperoni pizza

      If you live somewhere where there’s a world market store, they carry it! (At least the one near me does.) A good substitute would be chorizo, or maybe andouille? Or just ground Italian sausage and then add some chili paste for heat.

    Hey man, salty italian here. But unlike other salty italians I’m a nice one, so I will point out the 2 mistakes that prevent this to be a nice “pasta risottata” in an effort to make you a better cook; please bear with me.
    First problem: to evaporate 1,5 liters of water down to a sauce consistency you will need approximately 20 minutes, which is way too much for the kind of pasta you’re using. That’s ok if you like mushy pasta, but if you like it al dente you should use way less water. In italy we boil in a separate pot not for tradition, but because It’s way easier to nail the right consistency. With your method you have to perfectly match the sauce cooking time with the pasta cooking time, It’s way harder your way.
    The second problem with this recipe, and the most glaring one: you need to salt your sauce and pasta man. I saw a pinch of salt with the onions at the beginning and then nothing more, and It’s just wrong, come on man... please, do it for your own sake: boil the pasta in heavily salted water, and put some more salt in the sauce. And a tablespoon of sugar to tone down the tomato’s acidity won’t hurt. Do it the proper way man, salt and taste, salt and taste!

    Tried the recipe. The pasta does not fully cook though it was in the stove on medium-hugh heat for almost 20 minutes. Am I doing something wrong?

    Delicious looking recipe! But just wondering, is the audio alittle off? Static sometimes when you speak alittle louder maybe?

    If I don’t have Nduja, what’s the alternative?

      You can peel a spicy sausage and put in, keep mixing with a spoon in order to make it break in smaller pieces. Remember that sausage must be cooked more than nduja wich is ready to eat. If you dont have spicy sausage use a normal one and add spicy pepper

    Interesting, you didn't seasion it it cos the sausage is already very well seasoned. Any recommendations on where to get nduja? Always wanted to use it in sandwiches and pasta

      Yeah there's a lot of salt in the sausage so I'd only season a little extra to taste. I think the best spot is spcialty food shops or cheese shops or online.

      You can get a 200g jar in the italian section of larger Marks and Spencers for £4, or £4 for 90g in Waitrose if you're in the UK
