    I cooked this last night for some friends. Fantastic dish! 3 notes: add 1 tsp of cinnamon (really draws out the flavour of the duck), add 3 sprigs of rosemary and let them just sit in whilst it simmers and make sure you salt the dish well!

    Coming from an Irish Italian background [ West Cork/Treviso] my foremothers used anchovies in their ragu.....brings another dimension into the flavours!! Cheers Donal!!!

    I am a big fan of Ragu, I had wild boar ragu in Florence, and this was even better, and it's so easy to make. I did let it sit for about 3 hours before I served it, and I think that made the flavor even better. I love your channel Donal, so many great recipes.

    1) Good video.
    2) They make aprons for a reason.
    3) You need a bigger pasta pot.
    4) Do you remove the skin from the duck before shredding or include it all?
    I was already planning on making this exact dish since I've had duck legs from the local duck farm in my freezer for too long. Bought the papparadelle & all the ingredients already and then searched for a video with a good method...this confirms almost exactly what I was planning on doing (so thank you!). I'd add some sprigs of thyme to the mirepoix, a bay leaf, maybe some orange or lemon zest & fresh pepper...but that's about it! I'm sure salt to taste too.

    I am in Florida observing Covid19 lock-down. I roasted a duck two days ago and I went looking for a recipe to use the left over 1.5 lbs. of meat. This caught my eye. I will make this tomorrow including the pasta by hand. It is amazing the things I have learned to make in the past 2 months locked up. I think I will make some ravioli also with the ragu as the stuffing.

    I Always roast or broiled Duck, but Duck Ragu ? Never done that before so i'll give it a go !

    This is definitely my comfort food. I'm half Italian and grew up on the most wonderful flavors of Italian foods. They are the best. And duck, well, that is my go to meal in a restaurant. Thanks for posting this dish on your video. I need to run to the store now to buy some duck for my ragu this weekend!

    Hello there Donal, this is so my type of pasta dish! Thank you for sharing this.. I am Vietnamese-American living in the Washington DC area, and Vietnamese, we really like our duck. I would choose duck over chicken any day. What a great combo-pappardelle pasta and duck! They both are my favorite ingredients. Hope all is well for you and stay safe during this crazy unprecedented period.

    I have made similar, but using "confit du canard", for a quick meal. I love duck and eat it often. Even buying wild ducks at the outdoor markets here in France.
    Also, like to make a mock cassoulet with canned beans and "confit du canard".
    Don't often see fresh duck legs here in France.

      Can I ask did you follow it exactly as this recipe said? I’m making it tomorrow and could only get breasts not legs but everything online says don’t do breasts!

      @@xLightningbolt hello! I did follow to the recipe - I think the leg is a bit fattier so may be better to cook with but honestly with breast it was fine!

    Donal , I will be trying this I love a good seared duck and I think I would like it with the pasta sauce I’ve never had it but almost every recipe of yours I try my husband and I totally enjoy it so sure and thanks for sharing your videos are amazing and your kids are adorable

    Made this last week. It was amazingly delicious and easy to prepare . Next time I'll be adventurous and add a shake of cinnamon to the meat side before searing and perhaps a little bundle of fresh thyme or rosemary in the braising liquid. Hey... life on the wild side! Thank you for enriching my cooking skills.

    Mmmm, duck meat is such a treat for me where I can find it. And red sauces are my preferred topping for pasta, regardless of what type of pasta you are using.

    I had to make this. This may end up killing me. So good. Here in Germany they seem to have duck breast in the frozen section in the super market. Discovered this a few years ago and somehow it ends up being better value than the mediocre steak they also sell at a premium.
