What a delicious recipe. A variation from traditional but still close to the heart. Tried it today. It came out so well. Did use mustard oil though and threw in some sprigs of fresh mint in the end which I had instead of curry leaves. This egg roast recipe with fennel seeds is a keeper.

I don’t reheat cooked eggs. You can make the masala on the previous day and add eggs before serving

Lovely recipe...one doubt if we hv to make for 8people should v double the onions or just simply take 3onions. Coz i fefl onions are sweet so the roast will become sweet
