Green beans carrot coconut fry:
I love this green beans, carrot stir fry with coconut. I chop the green beans and carrots. I buy a brown coconut and scrape the coconut meat carefully with a coconut scraper. You can also use unsweetened coconut flakes.
Ingredients:
1.5 pounds green beans chopped finely
3 medium carrots chopped finely
2 tbsp olive oil
1 tsp cumin seeds
1 medium garlic clove diced
1/3rd tbsp salt
1/2 tsp turmeric
1 tsp chili powder
1/3rd cup fresh coconut or unsweetened coconut flakes
Here is what I did:
I took a pan and put it on the stove on medium heat
I added 2 tbsps of olive oil
I let the oil heat up
I added cumin seeds, garlic and let them sizzle a bit
I added the chopped carrots and sautéed for a couple of minutes
I added the green beans and sautéed for a couple of minutes. I made sure the oil mixed well with the carrots and green beans
I transferred this carefully into a microwave safe dish
I put it in the microwave for 8 minutes
After 8 minutes, I took it out of the microwave oven
I transferred this back into the pan and added salt, turmeric and chili powder
I mixed all these up and sauteed for a minute
I added the coconut
I sautéed this for a couple of additional minutes
That’s plenty of good vegetables
Enjoy
