  • Beef Wellington blew me away as a junior chef at Buckingham Palace. How were the chefs able to cook this beautiful and delicious dish to perfection and serve it just perfect to The Royal Family and visiting Kings Queens and Presidents ? The pastry had to be golden and crisp, the mushroom duxelles (puree) had to taste amazing and not be too runny and of course the beef had to be cooked to perfection (with an end piece well done for The Queen)
    In this video I share the royal recipe. (Notice how the mushroom duxelles doesn't go all the way around the beef so as not to overpower it.) It's an expensive dish to make and for special occasions. But you can use pork tenderloin too to make it cheaper.

    Beef Wellington
    Serves 6-8
    2 1/2 lb center cut beef tenderloin
    Chef McGrady Buckingham seasoning or salt and pepper
    2 TBS vegetable oil
    For the duxelles;
    24 oz baby bella mushrooms, finely chopped or pulsed in food processor
    1 large onion, finely diced
    1 TBS oil
    2 TBS olive oil
    2 TBS butter
    For the crepes;
    1/3 cup flour
    3/4 cup milk
    1 egg
    1 TBS vegetable oil
    1 lb puff paste
    1/4 cup flour, for dusting
    1 egg
    1 egg yolk
    Season the beef with the Buckingham seasoning or salt and pepper. Heat the vegetable oil in a large skillet until smoking. Sear the beef on all sides. Refrigerate.
    In a separate skillet heat the olive oil and butter until melted. add the onions and garlic and a little salt. and cook until the onions are soft and translucent. Add the mushrooms and stir, reduce the heat and cook the mushrooms until most of the liquid has evaporated. Add salt and pepper to taste. Refrigerate.
    In a large bowl add the flour, milk and egg and mix until there are no lumps. Heat a splash of oil in the pan and heat until smoking, pour in about 2 TBS of the batter and swirl in the pan. Cook until brown and flip and cook on the other side. Remove to a plate and repeat the process until you have three pancakes/crepes. Refrigerate.
    Roll out the pastry into a large rectangle. Place the crepes overlapping in the center. Cover with the duxelles leave about 2 inches around the edges. Place the beef in the center. Brush the whole egg around the edges of the pastry. Fold over one side of the paste and trim excess pastry. Repeat with the other side. Invert the beef Wellington onto a baking sheet, brush with the egg yolk and bake at 350 degrees for 40 minutes.
    Allow the beef Wellington to cool about 10 minutes before slicing.

    For my high school graduation in 1975 (yikes!) my wonderful sister took me to the fanciest restaurant in town, the Copperbeach Inn, where I was first exposed to Beef Wellington. I have rarely found it available since then, and none lived up to the memory. Since then I learned to cook fairly well. Or, perhaps, better. Still, Beef Wellington has remained out of reach. Until now! This is the uncomplicated but gorgeous version that I'll be attempting myself. I can't wait! Thank you, chef Darren. Be well.

    I've never eaten Beef Wellington. Since you mentioned Julia Child I have a couple of anecdotes. She was in the OSS during WW2. She went to Ceylon(Sri Lanka) and Burma(Myanmar). I read a story once that a woman was having a dinner party and called her up to ask her for advice. Even though she didn't know her Julia Child helped her plan it. Then called back the day after the party to find out how it went. Class act. How many of today's "celebrity chefs" would do the same? I think several probably would but unfortnately some wouldn't even give you the time of day.

      Do it you won't be sorry. I had never done one, just watched a couple of you tube videos then went ahead and it turned out great. I seasoned with salt & pepper only then seared (do the ends too) then applied english mustard to the outside as soon as it finished searing. I also wrapped in prosciutto, didn't bother with the crepes. Onion and garlic with the mushrooms is best (some do mushrooms only) and can throw in parsley as well. There's lots of variations out there.

      Beef tenderloin is quite expensive. If you want to make this on a cheaper budget and have something for a family dinner or the like, go with a Pork tenderloin. MUCH cheaper (though smaller). I suggest going for an apple based layer instead of mushrooms but aside from that the principle is exactly the same and turns out amazing.

    I made beef Wellington for a number of years for Christmas dinner; Tyler Florence's recipe. He used the prosciutto as well, with a green peppercorn cream sauce. I finally realized that the crust, and duxelles, and prosciutto were all just too much. If I ever make a fancy dinner with beef tenderloin again, I'm just going to roast the beast, and serve it with a hollandaise or peppercorn sauce.. simpler and let the beef shine.     I have never made Beef Wellington but it is a dish to die for. I have only found it in two restaurants. They were both in Florida. The first was in Boca Raton in the 1970's, long gone. The other is currently open in St Augustine. They both served the dish as individual servings, the beef being wrapped completely as it was served. Heavenly.

    If you look them up, Wellington boots in the US are often black. leather, and stand about ten inches. The tops used to have slightly higher fronts and and backs. They have changed appearance over the years and what are labeled Wellingtons now often look a lot like "roper" boots. The rubber boots that the English call Wellies are just rain boots.

    Your beef wellington looks absolutely delicious! Yeah, I’ve never made it before, but I honestly don’t think I could wrap it tight enough.

      I was a chef for 10 years and made 1000s of Wellys. Try wrapping it in plastic, then twist the ends of the plastic until it makes a very tight “sausage”. Wrap it as tight as possible, the put it in the fridge for 30-60 minutes. You’ll get a nice tight Wellington doing this.

      If you use the plastic technique it's a lot easier. But it's a learning dish, you don't get it perfect on the first try and that's ok

    Love this recipe. I always use my remote digital thermometer. I can set it and forget it until it signals the internal temperature that I want. Can't cook without it.

    Hello Darren, I think I finally have caught up on all or most all of you previous videos. I love watching and listening to you. You have the most pleasant voice. This beef wellington looks so delicious, but I would have to omit the mushrooms, just not a fan, but would love to make it for a special occasion. Hope your enjoying the good Texas weather.     The best dish I ever learned to make. It’s the recipe I bring out for a dinner party or holiday meal. I learned to make it from watching The F Word (Gordon Ramsay) so I use Parma ham instead of crepes. Also, I’m terrible at making crepes so the ham is full proof. I like the way you make the mushrooms and will have to give that a go next time I make this.

    Beef Wellington is always delicious. I made it during the christmas holidays. But personally I prefer it with additional Parma ham. The ham adds even more flavor and goes perfectly with the mushrooms.
