Omg! My childhood memory of watching "Yan Can Cook" just came back. My heart is pounding ♡♡
I was an early 90's kid who spent most of my days (and nights) at school. My mother and aunts are great cooks but I never had the time to learn from them. This is one thing I still regret to this day. And in between schools and sleeping, I found such comfort watching cooking programs or food shows, and K-dramas LOL. The first time I really cooked for someone else other than myself was after marriage, and strangely, it was like cooking had been in my blood all those times I didn't even know.
Family and friends think I'm some kind of cooking genius and encourage me to open restaurants. A lot complimented my food. I think Yan was one of the people I owe it to. Not the finest technique or anything fancy, but the joy and passion in food you gave me.

Finally rediscovered my dream chef of the past (PBS) on TH-cam. ... Hats up to Martin Yan.
Martin Yan maybe is the first Chinese Chef in the USA on public TV. I look at him growing up back in the mid 80s where from him I learn to appreciate Chinese food and still love it. Famous Quote: " IF YAN CAN COOK YOU CAN COOK TOO " Anyone who make a remark on his cooking don't know anything about cooking or Chinese food.
One series an actor comedian (Dwight Schultz) from A Team remark - "COOKING IS A WORK OF ART" for me he was right,. every-time we can recreate a new dish from the last one.
... Hats up Again Martin Yan.

He's one of the very best, on video the Chinese Julia Child. It's not just his encyclopedic knowledge and pro skills, more than almost anyone else he regularly takes the time to explain why things work the way they do, what you need to know to make things go right, and how to pull it off, what to practice. Martin's truly one of the greats in the field.

This guy is almost like the embodiment of westernized Chinese food. No, I don't hate him a bit. Everyone has their own way of cooking. Though I don't enjoy his recipes myself as someone growing up in China as a child, I respect what he has done. Innovating the cuisine to fit the western pallet and spreading awareness for Chinese cooking which has a very rich depth and history. Plus he is just pleasant to watch.

Yan actually came over from China as a highschooler, and supported himself at UC Davis as a chef.
He's actually super authentic, but those recipes are usually only on the overseas program.
He also doesn't really have an accent, and is a total hardass in the kitchen (in the best way possible).
      Just saying.
