    I think I prefer the old PBS chefs/cooks to the Food Network stars. I'd forgotten how I loved watching The Frugal Gourmet & the others when I was growing up.

      this is how people actually cook. sometimes you mess up, sometimes you forget where things are. The polished and sanitized versions of Food or HGTV cooking shows aren't relatable

      @@andrewflick363 I never thought of that! But so true, we learned how to cook in the real world and perfection wasn't expected. I don't remember who, but after one of the old TV chefs did something wrong, they saidIf you make a mistake, just say it's "homestyle". I live by that advice. We have a lot of "homestyle" food on my table.

    They certainly don’t make great shows like this anymore The Frugal Gourmet,Jack Peppin , Julia Childs, Yan CAn Cook, and the Italian chef ciao Italia ❤️

      I found out last summer that the song is part of Handel's water music, was listening to the whole piece when I hear the middle and wondered why it sounded familiar.

      ​@@gameshowguy2000 Probably early 80s based on the Chicago station, I think they were at the San Francisco station by the late 80s or 1990, show ended around 94 as I recall. (Started in the 70s in Tacoma, possibly with a different title).

    Traditionally the bottom crust was a barrier layer when cooking with direct fire and cast iron(which can chemically react during long cooking with acidic foods) also was sort of not-stick and made cleaning easier. Generally only basic flour and fat, not really meant to be eaten in all cases.

    I love this man!!! Unfortunately he didn't have a gimmick or shout like that idiot emeril or any of the newer "cooking" show hosts. Most of todays hosts don't even know how to cook, they are just scripted to within an inch of their life. Thank you for uploading!

    To have the best crust you should use real butter instead of margarine. Always make your crust like a crescent dough by rolling into six layers. Roll, fold, roll, fold, etc and it will be so light and flaky.

    Does anyone have the Frugal Gourmet intro where he is riding around on a red swind bicycle? I really remember this intro when I watched this show as a 3 year old in 1990. Although this might just be the Mandela effect at work.

      It is important to apply Empathy and a requirement of facts.

      That's like saying that if we didn't see it, we cannot say the Holocaust happened.
      Despite all the rumors, I believe that Michael Jackson was never a child molester. If he were, actual victims would have come out in droves by now. In fact, one man who had been molested by other men in his youth by other celebrities said that MJ never molested him.
      Jeff Smith, on the other hand, was accused by a number of men who did not know each other. One person I can believe is a liar, but not a whole bunch of them. My judging is based on reasonable evidence, not any psychological reasons you describe.

    Store bought is not good because they skimp by not putting in the last few cents of meat. People spend so little for the ingredient even much less than

    I like to watch these episodes to hear Mr. Smith talk about such things as having lots of junior high boys around to "peel his onions". I guess there was too much money to be made for his wife or PBS to blow the whistle on the old pervert.

      Coconut oil and butter are truly healthier that margarine and any corn oils, due to mutating the elements to extend shelf life.
      Know this is fact.
      I split butter with Coconut Oil or just use Coconut Oil.

      PatCat I think at the time this was filmed margarine was more popular then butter for economy reasons and get the time people thought margarine was healthier back then. Now we know better

    *(We were wrongly told the margarine and corn oil shortenings were healthy back then. Incorrect, actually the original shortening from before gov began quoting standards, early 20th Century was healthier and that was Lard mixed with Coconut Oil.)*
    Butter is healthier than margarine and the healthiest now is "Kerry Gold", product of Ireland - cows graze and in green fields of fresh natural greens.
    FYI - Replace Crisco with Coconut Oil - same consistency as Crisco Shortening and 99.999% HEALTHIER
    Corn oils, margarine, and shortening are all together TOXIC to one's system due to their hacking them to have longer shelf life - mutated elements simply make THEM money and Cost you Money and your Health.
    The Fed Gov was not giving the facts, but we're making own investment profits off corn commodity market.

    Its funny, but you never hear anyone comment on how dark the studio was. Very similar to CBS programming like Barney Miller, back in the 1970's.
