@@ben_angel as and when is required I switch from brush to pencil to brush. Even sometime I use pen tool if needed. I focus on creating art, not on tools.
Although I cannot recall the specifics at the moment, one thing I am certain of is that I always make sure to use the latest version available from Adobe Creative Cloud. Whatever version they provide, I ensure that I am up-to-date with it. Presently, I am using CC2023 V27.7.
In Adobe Illustrator, you can change the stroke profile of a path using the "Stroke" panel. Here's how you can do it: 1. Open Adobe Illustrator and create or open a document. 2. Select the path or object to which you want to apply the stroke profile. If it's not already a stroked path, use the "Pen Tool" (P) to draw a path, and then select it. 3. In the Stroke panel, you'll see various options to customize the appearance of the stroke. One of these options is the "Profile" drop-down menu. It's represented by a square icon with different stroke profiles. 5. Click on the "Profile" drop-down menu to reveal the available stroke profiles. 6. Choose the stroke profile that you want to apply to the selected path. You can click on different profiles to see how they affect the appearance of the stroke. 7. If you don't see the desired stroke profile in the default options, you can create and save custom stroke profiles. To do this, click on the "Profile" drop-down menu and select "Open Profile Library," then choose "User Defined." This will open a new window where you can create, edit, and save custom stroke profiles. 8. Once you've selected a stroke profile, it will be applied to the selected path.
Not to worry. there are hundreds of tutorial that used pen tool and mouse for portrait illustration that you can follow. I did this tutorial exclusively on graphic tablet because that was not available on TH-cam, at least step by step.

It is a default brush in brush panel. Looks like a spot brush, but if you hover over on it, the tool tip will state it's nature

why doesn't my pencil thickness look the same as yours? no matter what i change the stroke to, it never changes. What am i doing wrong?
Pencil doesn't act as pressure sensitive. It is brush who has that characteristic.
