I absolutely LOVE putting bacon grease on bagles or english muffins, and then making them golden in the air fryer. Saving things like lard, and bacon grease and stuff like that is "KEY" if you are trying to nail a recipe that was your grandmothers or great grandmothers (anyone's relative that lived thru WW1, WW2, and the Depression.) Much of how their cooking ended up how it was, was because they couldn't waste anything. That's one key method acheive OLD WORLD flavor - is recycling fats.
I do the same with tomatoes at end of season. Cook it down to almost a paste, put in ice cube trays. Great for adding just a little tomato taste to meals without overwhelming it

I have never taken the extra step to strain the bacon grease. I always add some to my meatloaf mixture for added flavor. Delish!
I made the potato soup from your cookbook which includes bacon grease or bacon and it was a huge hit! Best potato soup ever said my Dave!
That’s how they make Kartoffelsalat (German potato salad)!! They glaze the bacon pan with a little vinegar too! Yummy! 😊

I put 2 coffee filters in a wide mouth funnel to pour hot bacon grease. All the bit are easily contained in the filter.
