  • Footage of kimchi as seen under the microscope. Kimchi is fermented cabbage, also known as Baechu kimchi. Many vegetables can be fermented to make kimchi, although cabbage kimchi is the most recognized worldwide.
    Typo correction: at 0:48, it should be "breathe" not "breath".
    I used two batches of kimchi. One was canned and the other was from a refrigerated jar. The canned kimchi had less microbes and allowed for the oil droplets to be more easily seen.
    At the end of the video I used a tryptic soy agar petri dish to grow the microbes in kimchi. It was incubated for 24 hours at 37 degrees Celsius.

    Was this manufactured kimchi? I'd love to see the difference between this and homemade kimchi, particularly some that's been stored in a traditional pot underground during a Korean winter.

      Yes, this is store bought kimchi. Different kimchi types, preparation methods and storage can result in different microbes growing. I don't know if I can get my hands on traditional korean pot kimchi but I will keep my eyes open.

      Interesting that this is store bought kimchi! I always thought kimchi kept in air-tight containers was 'finished', and didn't have much for live bacteria. I thought it was because if there was active bacteria and yeast still in it, gas was being produced that would fill the jars (potentially breaking glass ones). It's nice to know my store-bought stuff might still have beneficial flora in it.

      Scopes are cheap and cool. If you want to see really crazy sights of the unperceivable. Try finding vids on Atomic Force Microscopy (AFM) or a Scanning Electron Microscopy (SEM).....Tunneling Electron Microscopy (TEM) for individual atoms.

      I used to have this handheld 50x magnifier with a built in lamp.
      It was a blast to look at tobacco for example. It's like some weird lovecraftian nonsense.
      Good tip: if you are a smoker, do spend the extra money on the good type...
      Also, you can pick one up for a couple of bucks and just look at anything. It's a fun new perspective on this horrifying world.
      Kinda like the opposite of a drone. Instead of making big things look small, it makes small things look big.

      i work in a lab with microscopes. trust me as much as i love the scope, you start to get cross eyed and get tired eyes. still very fun, though! just make sure you have your eye drops ready :)
      if you want a microscope, i know there are cheap options out there that don’t need immersion oil.

    would love to see comparison between fresh and fermented cabbages under the microscope (for cell structure changes probably?), and also, do you isolate any microorganisms grown on the plate? anyways, nice video! :D

      @Jk i agree. Our "truth" is objective truth because we live a human experience, we have no idea if everything we see is its true form or a byproduct to compensate for our limited brains. We cant even say the rainbow spectrum is all the colours in the universe, its only representation of all the colours WE can see. Mantis shrimp can see way more colours than we can.

      ​@@sci-inspi Actually, I want to point out that the yeast in kimchi doesn't really participate in the process of fermenting. The major part of the fermentation of kimchi is done by various species of Lactobacillus, which are facultative anaerobic microbes. So it is kinda crucial to maintain anaerobic surroundings for Kimchi to be fermented well, where yeast can't really thrive. Thus, if there are significantly many yeasts in Kimchi, it means either the kimchi isn't fermented very well, or it has been made quite long ago since yeasts gradually take the place of lactobacillus due to the change of pH.

    These fermenting bacteria produce vitamin B12, one of the only vegan sources of B12, as no plants have it, except some seaweeds. Hence, on a diet including kimchi may be entirely plant based

      Aneesa H. Just don’t be fooled into buying a bad microscope just because it advertises as high magnification. You’ll see things that go upwards to 4000x but it means nothing.

      Hello!
      1) I place my camera (a Nikon D3300 DSLR) on a tripod and put it right on the eye piece of a microscope and record through there.
      2) I use 100 ul of sample on Tryptic Soy agar to grow microbes on all my videos so viewers can compare the growth between videos. Different media will grow different microbes.

    Is the bacteria on the red liquid drop good or bad? I share chopsticks with other people when I eat kimchi and its normal for koreans to do that.

      Dude. Seems like you're too sensitive about hygienic thing. Come on.. Human have immune system. Except if u have immunity disorder like AIDS or something like that..
      Even if the bacteria is bad bacteria, we still can immune.
      Remember. All food that come to our body have bad bacteria in it. Bread, soup, etc. It's just.. In small number. That's why the food doesn't rot. But if we put food especially the wet food on the open place or outside the refrigerator, they can suddenly rot. One of the factor is because the bacteria is already there but in small number. Bacteria and virus is everywhere. They're in air. So they can reach every place. Plus, it's also on our skin. From head to toe. And... They(bacteria, good and bad) also on our utensils. Plate, cup, glass, spoon, chopstick, etc.

    Seeing the microbial activity makes me wonder about one thing. Whenever I made some fermented food much like kimchi, I could leave it on the stove for several days in warm weather and it would be still good after a week (no refridgeration whatsoever). Not sure if all that acidity was responsible for it or if there was something more to it....

    After 4 weeks it gets sour and full of taste and enzame.

    +Sci- Inspi can you do timelapse of blood coagulation in open air? If we let the blood in open air we can see it turns darker and darker until it's completely brownish in color, I meant I just I wanna see how exactly the red blood cells become dead.

    The kimchi liquid you inspected looked dead, like the bacteria were only subject to brownian movement?
    How do the lactic acid bacteria (as found in kimchi and other pickled vegetables) feed themselves?
    How does fermentation affect the cabbage's cells?
    What is the cellular structure of chilli pepper?
    How do yeast cells divide? Where do they come from? How do they interact with the bacteria? Seems like a symbiotic relationship.
    What organisms developed on the petri dish?
    So many questions. Would love to learn more about the microbiology of fermentation.

      Everything has bacteria in it even us. Its not harmful because its normal flora. But some are opportunistic and become harmful when your immune system is compromised.

      Some bacteria are good, some bacteria are bad. In this case, kimchi has "good" bacteria which helps the digestive tract of humans. That is why Kimichi is a very healthy food.

      I doubt that hand sanitizers kill 99.9% of bacteria... I've read somewhere (in some medical science article) than even the best hand sanitizers can kill (or remove) up to 83% of bacteria on our hands (the rest remain on our hands)... anyway it depends from the quantity (and quality) of the hand sanitizer, it depends from how dirty or clean your hands are, from how much time you'll spend rubbing your hands with the hand sanitizer, and from what percentage of your skin you'll cover with the sanitizer... But yeah, advertisements that claim that hand sanitizers kill 99.9% of bacteria are probably bullshit...

      The microbes that grow are not pathogenic and won't get you sick if the kimchi was made properly. They are killed by your stomach, coexist in your gut or are pooped out.

    Little Jeff Beck sounding there...Nice.. Have made many many gallons of Kimchi, using at least 4 kinds of cabbage at different times and a dozen different vegetable combinations with the cabbage, spices, etc. Sometimes with fish sauce, shrimp paste, and even seaweeds.
