- When I heard New England beach pizza called "America's worst pizza," I knew I had to give it a try. Featuring a thin crust, a very sweet sauce, a scant sprinkle of mozzarella, and full slices of provolone - it does possibly deserve its dubious reputation. But, I will admit that it’s good in a guilty-pleasure sort of way, and this was a fun experiment. Enjoy!

Since I know what chef John call a "touch of sugar", I was really scared when he said "a stupid amount of sugar". Glad to be wrong for once!
Honestly that was a lot less sugar than I thought. It’s like when he says a pinch of salt and it’s more like a quarter cup.

I've been making beach pizza for years for two purposes, to please kids and to serve as an hors d'oeuvre. I make two minor changes to the recipe you've showed. I smash 2 anchovy fillets (I use King Oscar) into the olive oil just before adding the tomato paste. I do NOT use Prego type sauce, I use Contadina Pizza sauce--this sauce is thick, very strong tomato flavor without that "dusty old herbs" flavor. I do add some fresh oregano and thyme from the plants in my window (or sometimes not). I also add the chili flakes, I use the Calabrian crushed dried chili flakes, they are fruitier and still nice and spicy.
If I'm making this for kids , they like it best with smoked mozzarella (from whole foods), I just chop it up as best I can and put it all over the pizza . . . no provolone.
If I'm making this for adults at a drinks buffet, I use regular mozzarella and add the provolone OR the smoked mozzarella and use more of it. Then I cut it so that each slice of provolone becomes 4 pieces.
This pizza, which in our house is known as "square pizza" is also a super favorite for pot-luck, I get, "Why don't you bring that square pizza with the round cheese."
There are NEVER any leftovers.
If the crust is yeasty and the sauce is tomatoey (which it needs to be) this is a good pizza. I think it is its own category of pizza.
Honestly, I hate lists and critique's like "the worst". How can pizza, made by hand, with love, for any occasion be bad, no matter the size, shape or toppings?? I swear people don't know happiness...
I am a terrible, intolerable snob when it comes to pizza or any other Italian food, and I can't argue with anything you said. You didn't specifically address the issue of that ridiculous amount of sugar (I probably would add little to none, and if I did, it would probably be a SMALL amount of Chinese sugar), but you had my full attention with the word "Contadina". YES!! I have loved Contadina for decades. I have an Italian meatloaf recipe that gets topped for its last 15 minutes in the oven with a little 8oz can of Contadina and some freshly grated pecorino romano. The Contadina that runs off of the meatloaf mixes with the juice/grease in the pan and makes a sacred substance that bread MUST be dipped in.
As a born and raised Bostonian, my mom would make English muffin pizzas and as a kid, she'd make her garlic bread with a deli slice of American cheese on a piece of bread with some garlic in the oven...so cheap, so easy, sooo delicious!
We used to make them in pre-school. We made our own and ate them. Brings back memories.
As someone who worked as a doorman at several adult beverage establishments in Salisbury Beach, MA, the two local purveyors of beach pizza were often he only choice for pos work food. It has been my experince thet the "cuisine" is very much enhanced when preceded by several aperitifs.

Pelham, NH here. Merrimack Valley pizza is super niche in the world of pizza styles. I feel like Tripoli's is single handedly keeping it going. Is it good? Meh. Would I crush a couple pieces? Yes I would!
Another New Hampshrite here. Generally my favorite style of is NY style, but after working in Lawrence, MA for a few years in my early 20's, Tripoli 's has become my favorite hands down. My wife's family is from the area and she grew up on it. We drive over an hour round trip for a couple trays once or twice a year.
Hearing this called "the worst pizza" has me like "fair, but also @#$! You".

just a guess, but 90 secs or so under the broiler after adding the provolone would improve the appearance and probably the taste
The places in New England that sell this always remove it from the sheet pan and bake it a second time directly in the oven to crisp up the bottom and melt the extra cheese.
My recipe would use 1/3rd that amount of Sugar... 🍕 But you are the boss of how sweet your sauce 😜!!!

As someone who's eaten quite a bit of this on New England beaches, the sauce never goes all the way to the edge (there is a dry crust), and when they make it they stretch the corners of the dough over the edge of the pan to keep them from shrinking back, and then tuck them back inside after saucing. They're also always removed from the sheet pan and baked a second time directly on the floor of the oven (after adding the provolone, if it's being used) which makes the crust nice and crispy.
I'm pretty sure putting that amount of sugar in a pizza sauce is a war crime.
There was a pizza place in Huntington on Long Island called, Guiseppe's. They made their sauce with Kool-Aid fruit punch. It was sweet and not bad, but it was one of those pies you'd get once in a blue moon to change it up.

New Englander here - I've been watching your videos for YEARS. This is the first recipe video with actual hate behind it, and it's.. valid lol. Much respect for keeping it real. Beach pizza is garbage, overall. Tripoli's is alright, shut up neighbors.
I like Tripoli as well but Beach Pizza is pretty good as well. Slightly thicker crust and the sauce is a little less sweet.
Skip the pizza and go for the cannoli!

Ha, nice to see comments from a local, we're Christy's people but Tripolis works too. We've always called this tomato cookies. BTW, I don't believe there's mozzarella at all, a little parmesan but no mozz.

As kids we used to make pizza with white bread, ketchup and cheese. This would have been our chef boyardee weekend family pizza.
I remember we had one of those plugin hot sandwich makers. Pizza, pinch of cheese, slam the lid down and viola, pizza when the light went off. Can't believe I thought it was super good.

the chili flakes ARE NOT optional. the amount is, but you still need at least a nice pinch, it will awaken the flavors of the sauce and if you think it will be hot, it wont. the cheese and the dough can negate a small pinch but not a big pinch

Another New Englander who's never heard of this style. Grew up south of Boston so we had Bar Pizza (or "Bah Pizzer" as we would say!) It is the pizza of my youth and I still love it. Slightly sweet sauce and a combo of mozzarella and cheddar cheese. Always sauce it to the edge so it'll caramelize -- wicked good!

Minus the provolone, it looks like the pizza you made out of the box kits you could buy in the grocery in the 1970’s. And they were gross.
My mother made those pizzas back in the 60s. I adored them. I don't know if I would adore them now, but they started me on a path to eating better pizza, and then making my own pizza and bread. I hope I never forget that chrome kitchen table, and the eagerly -awaited pizza coming out of the oven.

You can still get them, Walmart carries them. Now they only include crust and sauce, you have to add your own cheese and toppings, but they're just as delicious and awful as they were when I was a kid, lol.
Chef Boy Ardee pizza kits. Includes: Dough mix (add water and mix), cheese (kraft parm, box insists you try the kit with additional grated cheese), sauce, and, if you picked up that one, pepperoni in the sauce (little pepperonis though in some kits the pepperoni was separate). My family tried them twice, once without buying additional cheese/pepperoni to put on it and a second time we did buy additional cheese. They weren't bad. They weren't stellar, they were... alright.
There are two worst pizzas I ever had , one from Dominos the other from Pizza Hut. The Dominos pizza had so much seasoning on the crust it was practically inedible. It was slightly doughy, as it wasn't cooked long enough, and the toppings were terrible. The crust, the parts that were cooked, was awful. And this was after they implement their new crust. Can't stand Dominos. The Pizza Hut one might have been worst. Got a stuffed crust pizza. The part of the crust that was stuffed was fine, kind of meh. The rest of the crust was hard like hard tack hard, couldn't even cut it with a sharp knife. Chewing it was like chewing wood. The toppings slid off the curst and their was so much oil the box was soaked through. It was disgusting. There was so much orange oil that it was DRIPPING when the delivery driver handed it over and the oil coated the inside of his bag and his hands.

Just moved to NE and it is wild how bad so much of the food is up here and how much the people up here love it. This sells like hot cakes at Market Basket and Hannaford. At least we are saving money on eating out less.

Um, I'm sure you have nothing to do with it, but there's a foul, phony maple syrup out there called "Vermont Maid." It's pure corn syrup and chemicals, of course. But, it's called "Vermont Maid," is bottled in New Jersey, the label has a picture of pancakes and says it's "The Taste New England Loves!"
Once Bernie wraps up things with Big Pharma and the billionaires, he should make his next goal the banning of deceptively labeled not-really maple syrup products.

Homemade 90's high school sheet pan pizza! Everyone knocks those but it was one of my favorites and I don't know why.

I have been listening to and watching, and in some cases copying Chef John's recipes and cooking hints for quite some time now. This is ABSOLUTELY the VERY first time I can recall Chef John giving a review of his video offering that pretty much says: I am Not Entirely Sure You Should Do This, It Is Interesting but Possibly Has No Redeeming Value! So prepare at your own risk!

Take old wooden rolling pin, disassemble and saw off just enough so it will fit inside the pan, barely. It makes doing pizza dough in the pan sooo much easier. Also saves me a headache when doing Drizzled Florentine cookies that the crust is baked in a jelly roll pan.

I had a spaghetti sauce that was so bad homemade.
My husband said to dump it in the trash.
But I put it in the fridge. The next morning, the sausage balls were delicious.
When I got home from he ate most of the meat balls and Italian sausage balls. But it never made it to spaghetti.
So sometimes you just go with it.
Now I'm craving Tripoli's so bad!

My family is from Lawrence MA so as a kid when we would visit there was always a chance we'd grab pizza from Tripoli's Bakery. Do I still like this stuff? Hell yes and hold the provolone.
I was born and raised in Maine. The only beach pizza I ever heard of or ate was a slice of “Lisa’s Pizza” with a side of crinkled cut fries in Old Orchard Beach Maine.
You know, there are some things I really don't need to try. I'm just gonna skip the sugar and make a regular, savory pan pizza.
I'm going to have to sit this one out and make a different style of pizza. None the less I thoroughly enjoyed this video. :)

Bravo sir. Well done. Having lived in the area for the past 20 years I can say you nailed the recipe. Your commentary and descriptions were also spot on. I have never liked this pizza, but for some reason the lines are out the door in the summertime. How you were able to accurately make this video from so far away is truly amazing.

The overlooked ingredients in this video include: with your friends or family drunk at 2am on an 80 degree beach night, sand between your toes, at best a few soggy dollars (that you didn’t spend at the bar) in your pocket, and most importantly the sounds and scents of the sea 😉 keep up the incredible work!

"Toledo-style pizza" (Ohio, not Spain) is pretty sweet, but almost savory barbecue-y, so a sweet pizza sounds kinda good to me. This looks weird, but I'd try it.
I would do this in a minute, WITHOUT sugar, and I would layer in pepperoni slices under the shredded mozzarella. And I am *going* to make it, not at the beach, but up in the mountains of western NC, come this Labor Day weekend. Thanks, Coach.

I feel very fortunate to be one of the few NewEnglanders who has known this awful pizza since childhood. It is incredibly unsatisfying and the last thing I would recommend to tourists. But there's a steady line at Salisbury Beach every time I'm there. Maybe I'm due for another slice... just to savor the idea of eating something so niche. I never knew how lucky I was 😂

Okay...Rhode Islander here. First time Chef John confounded me. Pizza Strips or Party Pizza does not have cheese UNLESS it is that fake parm in a plastic shaker thrown on as an afterthought. I have never heard of NE beach pizza but if anyone else has had this in NE, I would love to hear about it.
edited to add; party pizza is often found at bakeries along with the much more awesome spinach pie.
This looks exactly like Tripoli's. The one I go to is not at the beach though so I don't personally associate it with beach pizza. Google Tripoli's pizza and you'll see it. It's really good and different. I get it with the giant pepperoni slices and extra cheese.

Born & Raised in Massachusetts, I never heard this called "beach" pizza. This was School Lunch Pizza from Elementary to late Middle school. I admit, sometimes I kinda "miss" it. My folks now and then made English Muffin Pizza, it was about the same. But anyway.
