I hope you find your sushi rice perfect recipe. Here's some info from a Japan trained chef. Sushi rice is just plain rice. It is only special in that it is (generally) higher quality and a well polished shorter grain. Regular short grain white rice will do just fine. The sushi mix is what makes it "sushi rice," not the rice itself. It's a mix of mild RICE vinegar and sugar (and if possible a piece of kombu seaweed). Sushi means seasoned rice. You must cook the rice with less water than usual, and when it's done cooking, let it sit and expand for about 10 minutes, then, while the rice is still very hot, gently sprinkle/pour the vinegar mix (sugar must be completely dissolved in vinegar) over the rice and gently fold in. No smashing the grains. Let sit 5 minutes, then lightly, and GENTLY fold 2 more times to distribute mix while hot. Let cool to room temperature and use. Rice should be slightly tangy - sweet, with glossy intact grains. Any leftover rice can sit at room temperature in a container - the vinegar will preserve it; no refrigeration! Use it til its gone- yummy! If the vinegar sugar mix is poured on cold rice, it will not absorb the needed moisture, the flavors will not develop, and the rice will taste too acidic. We love fishing off of our Lagoon 440. A couple of suggestions for keeping your fish on. Get a tennis ball and cut a cross in it. When you have a fish on, pull your rod out of the holder and put the tennis ball on the butt of your rod for cushion. Hold the rod yourself ( I usually have it on my hip) and pull up and reel down. Also, we never take sails down when we have a fish on (but you can certainly put your engines on idle or a low rpm). Taking the sails down sucks when all you get is a cuda. We brought a blue marlin in going 8-9 kts under sail once. Also, our favorite lure is a tuna tormentor. They are the bomb! Happy fishing.

Also for sticky rice make sure you rinse it until the water is clear before you cook it and if you use a rice cooker you can cook it an hour or two ahead of time and it'll get stickier as it rests in the cooker as long as you dont let it dry out.
Sush rice, sticky rice risotto rice are all fat(short) grained rice and only rinsed once or not at all to retain as much starch and cooked with less water or as little as possible, as opposed to Jasmiin and other long grained rice, are best to use for fried rice that is rinsed more than once to remove the starch that makes it stick together.
Been going there since the 80s and it's absolutely gorgeous. If you think the Jumento Cays are remote and have good fishing, wait till you go to the Fish Cays covering the bay between the Crooked in Ackland Islands! About barracuda, the University of Miami did a study on barracuda and Ciguatera poisoning. They found that barracuda, both shallow water and deep water, contained none in fish are under 8 lbs, above 8 lbs, they all contained some Ciguatera, ranging from a little bit in fish just over 8 lb to amounts that can kill you from just a meals worth in the very largest, 6+ footers. Back early on in my travels down there, there was a report of Cuban fishermen being air evacted, to Nassau, by the DEA station in Georgetown because they caught a 6-footer and had it for dinner. The outcome was two dead and the rest hospitalized! So we do eat under 8lb barracuda and we've never had a problem and they're extremely tasty... Finally, you were saying you want to fill your refrigerator with fish to take home. Be sure to observe the Bahamian fishing regulations because if you get caught with more then the allowable limit of any species by the Bahamian Defense Force, you will be in serious trouble! And yes people get away with it all the time, but the bahamians are cracking down on people transporting excess fish back to the US. Above all, Enjoy!

Add extra water to the rice so it "over cooks" and it will become sticky. So if your rice calls for 2 cups water to 1 cup rice, add 3 cups of water and it should get sticky/starchy.

Hi . I have not only watched all of your video's which I think are very good, i have also watched many of the other sailing shows. i do not know how to sail. I know the term taking in a reef . That seems sensible . Still I do not see what is used to keep the reefed part of the sail from just filling back up again when the wind blows hard. Are there holes in the sails to tie them down or ropes I have never spotted that your tie the sail down with . To me it seems like you sailors pull down part of a bag and it then just stays down on its own . If i did that with a plastic bag outside it would just fill the bit that I pulled down . PLEASE EXPLAIN WHAT IS HOLDING THE REEF DOWN. its has been at least 15 years of watching sailors and still I do not see anything that hold the sail down

You are NOT going to catch wahoo on mono…. Wire or Cable! They can slice through 300lbs mono leader like butter! You’re also in Yellowfin territory… Look for birds working the water… Especially Frigates that are circling in an area… They are your pointers to Mr. Big Fish! Good Luck!!
Any short-grain rice should work fine for sushi. It has a natural stickiness to it. That will be a lot easier to find in any grocery store than sushi rice. All Sushi rice is, is a short-grained Japanica rice that is grown as much in California and Texas as it is in Japan. I have friends who grow this type of rice in Northern California and in the past, they would travel to Japan to help the Japanese rice farmers increase their production in each field. They work with the Universities studying how to do this. Japanica rice is a short rice and it is sticky when you cook it. The only thing that makes sushi rice actually sushi rice is that they sweeten it with sugar and water, and charge a lot more for it. Look at the rice you are trying to use there, is it medium or long-grain rice? Those rice will not be as sticky in texture which is why my family likes to cook it for just serving as rice. When you get back to civilization or to someplace you can get groceries, then just pick up some short grain rice to make your sushi with.
At this point, having ciguaterra is an evolutionary advantage because you don't get eaten by humans. So fish that have higher levels will reproduce more than those that don't.
