      Try dinakdakan ate(ung hindi authentic) kasi baka di nyo kayanin yung pig mask at brain😅, ginagawa ng nanay ko pork belly at mayonnaise pamalit sa pigmask at brain, para syang sisig na less oily ate try nyo 😁

    Yup, it needs far more toyo and vinegar and more black peppercorns. It's probably what Eunbee found lacking. But for the Korean palate, I think minimizing the toyo is best for making it less salty.

    Adobo has plenty of version on Philippines cooking there's Adobo sa Gata, adobo Saba, adobo quail eggs, Adobo chicken egg, adobo pineapple, adobo tamarind, adobo black beans and so on .. Anyways, PH and Hawaiian cooking recipes are almost they same there both delicious in Hawaii they have Adobo Pork Fried rice Omelette there delicious take -out ,soup adobo pa lang ulam na..

      ​@@beashemmad.sayson545But their logic is that everything can be called Adobo. So Humba is just a version of Adobo. 😢. I had Humba in Cebu, it was one of the worst ever dish i have ever eaten in Asia. It was 95% Fat and no one bothered to remove the hairs on the skin. Plus it just tasted like armpits. The Humba in Bohol was better. In Dumaguete is okay, but also too much fat.

    Kristy, you can do a collab with Bapmukjago. They are a Korean married couple from Negros. They make cooking videos and they only cook Filipino foods. Maybe they can help you out with cooking Filipino dishes. That would be the best collab ever.

    i heard somewhere that there is no "right way" to cook adobo. whatever way you want to cook it or whatever you enjoy is what matters so you did a great job on this one!

      Yes ma’am every places have different ways of cooking adobo but as long as you put the adobo ingredients they still taste the same.

      That is why Adobo has no meaning. Even a 7 year old can cook Adobo and put strawberry jam or mapple syrup and it will still be Adobo. In California, they put condensed milk in adobo.

    That needs a little more toyo. 1 kilo usually 1/3rd cup so you can taste it. Also whole peppercorns. Just a tip :D

    For me that's the perfect adobo! i guess that's the original way of cooking adobo..simmer until dry and let the meat release its own oil. Most ilocanos cook adobo as adobong tuyo. Mas dry mas matagal ipreserve. Mas tumatagal din shelf life. Mas malasa pagka adobo pag medyo burnt yung sibuyas saka bawang.

    I like your resoluteness at adulting, cooking adobo your way! And that isn't brnt...it's tostado which really should be the case because you did the dry adobo version...you have mean kitchen skills, the way you pan-flipped that adobo is so suave, man! Yor Dad is a cool one

    For your sisig, you either boil it and deep fry to make it crispy ala lechon kawali or you grill it to achieve the smokey taste. Be it pork meat or masskara ( pig’s face or ears)

    In the Philippines we have all kinds of Adobo, your Adobo is specifically Adobo Tuyo or dried Adobo and same as my mom, my mom likely less salty vinegary pork adobo, you made my day and enjoy to living in the Philippines, i am new subscriber... Kudos. ❤😊

    Next time
    1st brown meat, then remove meat from pan and set aside.
    2nd in the same pan with oil add dry spices. Dry spices and herbs require heat to activate. You'll know it's activated once the aroma blooms. Last add garlic to brown
    3rd add the liquid ingredients into the pan and let it reach a boil. The spices and liquid will infuse.
    4th add brown meat into the boiling soup stock. It's better to put it in hotel pan with cover, then braised in oven.
    5th once meat is tender, separate meat from braising liquid. Places liquid in sauce pan and reduce. Season to taste
    The onions can now be separately cooked either caramelized or to crunchy translucent in clarified butter or olive oil.
    6th combined meat to liquid, garnish with cooked onions.
    It will be more flavorful and the onions will provide flavor and change of texture.

    Some pinoy adobos, they fry the meat(pork/chicken) before they cook it as adobo to make it more crunchy.

    Try cooking- Rellenong Alimasag (stuffed crab). Even if you don't get it perfect on your first try, it'll be tasty, as long as the crabs are fresh.

    I've seen adobo cooked like this before (I don't know the region)...like more of a dry style. I think it's more fitting for Korean palate since they like samgyupsal which is not saucy.

    Just add more soy sauce and vinegar then let it simmer until a bit dried up. Then add sprite for the sweetness and simmer again. 😊

    That is dry adobo, another version of adobo. You can cook it with sauce or you can simmer it until it gets dry and only oil is left. If you want it with sauce, you can add water and more soy sauce. My version, I dont put salt because soy cause is salty already.

    Wow .... ang ganda namang kasam-bahay nyan, sexy at madiskarte pa sa kusina. Eunbee, just dip the food in a fish sauce with freshly squeezed calamansi juice if you want your food a bit salty for not everyone in the family might not want their food too salty.

    That’s a good adobo imo. We call that adobo in region 4, “adobong matanda”. It is cooked a little longer than usual (like what happened to yours) until the sauce is reduced to oil only and the soysauce is absorbed by the meat. You were not able to mix it from time to time that’s why the aromatics got a little burnt.

    For my way of cooking adobo. I cook my pork belly in low heat with no oil and I let the oil come out first to make my adobo tasty hehehe

    U might have forgotten to adjust the heat kaya madali lang sya na reduced, hehehe! Pag nag simmer ako I usually used between low and medium heat para di madali ma reduced.
