Stir-fried Beef Tripe

Ingredients:
2 lbs - Honeycomb Beef Tripe
1 small - Lemon
1 medium - Yellow Onion
3 pc - Star Anise
2 pc - Bay Leaf
4 in - Ginger
1 dozen - Scallion (white parts only)
1 small - Jalapeno
12 clove - Garlic
1 tbsp - Fermented Black Beans
Seasonings*:
1 tbsp - Olive Oil
2 tsp - Salt
1 tbsp - Soy Sauce
1 tbsp - Sake
1/2 tbsp - Chili Sauce

Sir how you make it very white while you clean? what items you used to clean it ?
I use salt to clean and some type of citrus to get rid of the smell =)
love beef tripe...where to buy... t and t maket has it... yohan center richmond bc also... they bring it in pre mada chilie sauce how do I find where it is made... and order or make my own...love it hope you can help.
Try a latin store....they always have it there...^_^
I actually saw some at chain market stores like wal-mart. Just be careful that you need to clean it very well.

Um, there's no grain in tripe. It consists of non-striated muscle. Just cut the tripe into bite sized pieces.
Maybe I used the wrong word for it. If you look on the back side of the tripe there are 'lines' going one direction like a piece of steak and those are what I am referring to. If you cook the tripe until it is very tender then there is no need for this step but it is my personal preference =)
Can we use omason instead of honeycomb
