Recipe: Beef Stroganoff

- This is one of my all time favorites.
Beef stroganoff is one of those globally classic dishes that originated in Russia in the middle of the 19th century. By the 1950s, American cooks were discovering global flavors, and the simplicity of this dish made it a staple in many households. Some recipes used mushrooms, mustard and Worcestershire sauce. Some went a little Hungarian and included paprika, and some went for a German twist with different types of mushrooms, caraway and noodles.
My family was made up of German and Russian Jews, and my grandmother had a Hungarian woman come to the house every Friday, cook several meals, stay over, clean on Saturday morning and depart at sundown. Guess it’s no coincidence that I make my beef stroganoff the way that I do. I am a product of history, just like you. Give this recipe a go and let me know what you think.

Does the baking soda technique work with other meats than just beef? Can you get a similar browning effect using baking soda on chicken?
yes, even onions brown much quicker when adding a pinch of b soda

Where were you last week when I was looking for a recipe?
Can you give advice if you do the baking soda and everyone is getting a strange mouth feel burning sensation from it no discernible flavor but definitely a mouth tingly sensation when doing the velvet beef or baking soda coating essentially.. and a suggestion for substitute of mushroom I’m super allergic love them but then can’t breathe and no alternative I’ve attempted comes close to the creamy depth the original with mushrooms gives stroganoff
My stroganoff recipe calls for simpler creation, small amount of tomato sauce and like 1 tbls sugar. Lot more onion then only 1 for all that meat

Here is a trick from a none professional chef? You can use Coconut oil get the same buttery results. Coconut oil is very versatile.

Scroganoff?
Every recipe I’ve seen for stroganoff calls for beef stock/broth.. why use chicken broth?
What is good paprika? Every one I've tried is flavorless.
Always try to find authentic Hungarian paprika.
