      Is the knife a Nakiri or Kiritsuke? Says Nakiri, looks like Kiritsuke. Shepherd's pie isn't cottage pie...and this is not a Nakiri style knife.

    My fiancée and I just discovered your channel over Thanksgiving when we were separated and he unfortunately got the flu. Since then we’ve been binge watching like there’s no tomorrow. We tried this recipe and we were floored. I had never made anything with lamb before. We made a few alterations because my partner has Celiac’s and we both are lactose intolerant. Even so, this was texture and flavor wise one of my new favorite dishes we’ve ever made. Over Christmas break we made this shepard’s pie and my dad was so impressed. We can’t get enough of your channel. So refreshing and always delicious. (We also used my dad’s instapot to make your beef bourguignon. He sent me pics each time he ate on the leftovers) Big thank you. Your meals have reinvigorated our weekday eats. Also, I just can’t imagine a better way to make a living. Can’t wait to keep watching.

    LOVE the spinach idea! I like to put sliced provolone or havarti on the meat before spreading the potatoes though. This adds flavor and stops the gravy from soaking into the potatoes too much

    Anything that has bacon and cheese is the perfect dish. Oh I love the spinach instead of the normal peas. Hey have you heard of washing your ground meat? I was shocked when I saw another cooking person say you HAVE to wash ALL your meat. I’ve never washed my meat and I’m still kicking lol.

    I was all in until you didn't add a layer of multi types of shredded cheese on top. Layer of meat, layer of veggies, layer of potatoes, and a layer of cheese. It's one of the best poor man dishes ever.

    Hi Sam, my Hubby and I just discovered you this week. I made your Shepherds Pie today for ourselves and 2 Seniors in our condo who, like us, cannot be with family for Easter. I had to tell you that I will no longer make Shepherds Pie any other way but your way for the rest of my life! The flavors were amazing!     Cooking instructions.
    I typed this out so I could make this. Please forgive any mistakes; just thought it might be helpful.
    Filling
    - Chopped up cooked bacon (cook and let rest reserving some fat)
    - (2) Carrots finely chopped.
    - ½ a yellow onion finely chopped.
    - 2 cloves of garlic.
    - 1lb? of ground lamb. (you can use ground beef instead)
    - 2 tablespoons of flour.
    - Salt & pepper.
    - ½ cup of red wine.
    - ½ cup of beef broth.
    - Few dashes of Worcestershire sauce.
    - Squirt of tomato paste.
    - Pinch of Thyme.
    - Pinch of Rosemary.
    - 1 giant handful of spinach leaves
    .
    Mash potatoes
    - Yukon Gold potatoes evenly sliced. 4 to 5 large?
    - ¼ cup of butter.
    - ¾ cup of whipping cream.
    - Salt & pepper.
    - Large dash of smoked paprika.
    - 5 to 6 cloves of roasted garlic (roasted in oven approximately 30 minutes).
    - Parmesan cheese. Finely grated.
    Filling
    - Pour most of the bacon fat into a small bowl for later reserving some in the pan.
    - Cook onions and carrots on pan for 3 to 4 minutes until softened.
    - Add a couple of cloves of garlic (pressed through a garlic press) with a little bit of oil added.
    - After 2 minutes add the ground lamb and cook (pink is gone) stirring to mix with the onions, carrots and garlic.
    - Add flour and mix it through.
    - Add red wine and beef broth and stir for a few minutes. Add Worcestershire sauce, tomato paste, salt & pepper, Thyme, Rosemary and mix.
    - Add spinach. Stir and cook until wilted down and absorbed in.
    - Keep simmering until thickened.
    - Remove from heat and add mashed potatoes with the bacon and smooth over the top making sure to cover all the filling.
    Mash Potatoes
    - Boil potatoes until tender.
    - Melt butter in a separate pan with whipping cream.
    - Mash potatoes (or if you’re a fancy pants put them through a potato ricer) in a separate pot.
    - Slowly add the melted butter/whipped cream mixture in stages stirring constantly.
    - Add some salt and pepper.
    - Add paprika, roasted garlic (without the paper).
    - Mix/mash well.
    - Add some Parmesan cheese and mix.
    Cooking:
    Bake in a 400 F oven 30 to 40 minutes it is golden brown on top. Sam did 30 minutes in the oven with 5 minutes under the broiler.

    Finally someone in North America recognizes shepherd’s pie is made with lamb, here in Canada they sell shepherd’s pie made with beef, the clue is in the name shepherds have sheep and ranchers have cattle and it’s a cottage pie with beef. Really bothers me far more than it should!

      The move is you do large batches of things that freeze well. You dont keep things in the fridge all week they dont stay tasty.

      Mike C Bolognese, Mac n Cheese Pasta bake, steak stir fry, literally anything you want to cook that can be transferred between two slices of ciabatta, make dishes that use rice as a side and you can use absolutely any leftovers you have to make fried rice, all good eats

    Hey, I'm eating this right now and I followed the recipe almost exactly (I didn't have any rosemary AND I used venison from a deer I harvested recently. I'm calling mine, "Hunter's Pie"). It is fantastic! Good call on the bacon, good call on the spinach. I've been following your recipes for a few months now after watching your tuna melt sandwich video and the simplicity and personability you bring make cooking fun for me. Thanks much Sam and Team.

      I know it's an old comment I'm responding to, but this is a perfect use for ground or cubed deer meat. There actually is a hunter's pie but it uses a pie crust, well that's the version I'm used to anyway.

      the man knows how to cook. but my personal opinion on things like this is try it traditionally then adapt it afterwards. so you know what it tastes like and what you would prefer more etc. hes obviously had traditional before though

      I've found that "No Sugar Added" Cranberry Juice makes a good replacement for red wine as well.

    My husband loves it when I make Shepard’s pie. I love adding spinach in where I can. Great source of iron. Looks great but I’d still have to add the peas for hubby. Not a problem. That’s cooking. Thanks for another great video. Looking forward to getting your knife. Knife work is one of the most enjoyable parts of cooking for me.

      He didn't chop on a board, chopped on a steel cooking surface. Always use the back of the knife to drag your ingredients. It's okay to use the blade to scoop up your ingredients. But OMG if you use those techniques of Sam you'll have to sharpen you knives allot more often.

      Also cooked spinach benefits: it still tastes delicious, just like raw spinach. Ok I'm bias af, I love spinach. Edit: I make a mostly veggie lasagna with 1 eggplant, 3 yellow squash, 4 zucchini (going for equal portions based on size of eggplant), and 2 lbs frozen spinach, per 3 lbs ground beef/turkey. There's the tomato and cheese and all that, but I couldn't not put spinach in it. It's vital.

    Shepherd's pie is one of the things I deployed in pursuing my now wife. Braised lamb shoulder and (very) wide homemade pasta helped seal the deal. Lamb all the way!

    Sam, this looks amazing, however, just for a reaction, I thought I'd show it to my mum because she's a Yorkshire lass. Well, it got a reaction all right!!!! After she regained consciousness from hitting her head on the coffee table as she fell off of the sofa, she made me make a pot of Yorkshire tea to calm her down. The tremors eventually subsided, but she said she had a restless night with little sleep. I must confess that the recipe looked good to me, but is somewhat avant garde for the more traditional amongst us.

      @@samthecookingguy I grew up in the UK eating my mum's shepherd and cottage pies. I went on to make my own for my own family, using all but one of the ingredients you show at different times and in different ways. (I don't think i've ever made either in the same way twice in a row) I have never thoght of including spinach before, but next time I make either of those pies I'm doing what you did! Is it a shepherds pie? Hell yes. Plus I appreciate that you called out the difference between shep and cottage, but people from the UK don't always call them the correct name on a regualr basis, so I don't see why people get all twisted up about it. Tasty food is tasty food, even if you got the name wrong. Chill out and enjoy your eats people! Thank you Sam, you've given me a new recipe idea.

    not sure what you made but its not Shepherds pie.. maybe a Californian Gentrified yuppie version of it but Shepherds pie it is not.. Spinach? Parmesan? Roasted garlic..? and the mash with paprika? No.. Sorry.. no way in hell we had those ingredients as a kid.. Ps, I was born on the borders of Lancashire / Yorkshire in the UK.. you have made something nice, but Shepherds pie it is not.

    Actually, I find the addition of the spinach quite intriguing and most likely brilliant (Some people put peas in there: So how is another green vegetable so out of left field in the end?); I look forward to trying it it Shepered/Cottage pie and "Paté Chinois"! 👍👍

    Irish guy here, this is an awesome recipe and I've got no problem with the spinach addition! Doesn't impact the deep delicious flavors in the slightest yet adds much needed nutrients. You're awesome brother! Keep it up.

    Wow! Made this for St.Paddy’s a few days ago! Amazing! Really loved the roasted garlic touch! Omg! And of course the BACON! I made a mistake! I didn’t put enough BACON!     Ok Sam,
    I get the spinach. It puts a certain delicate twist to the whole thing.
    As a Brit we too love bacon like the yanks, but not on a Shepards pie. I will try it but it seems just so ?
    The tats on top are a wee bit to smooth and runny for my taste. Think that they have to be a little more stiff so you can actually cut a piece out as a pie slice.
    But i love the fact that overseas people are putting twists and ideas on British food. But i will say that i prefer yours better than the one done by Ramsay. But the best one is and will stay the one from my Gran.
    I would like to see you do a traditional bubble and squeak.

    My mum made Sheppard/cottage pie with lots of leftovers, I would eat the nasty green stuff, but no cheese.
    Cheese does not go on a hot meat and gravy dish.

    sam we add brussel sprouts and green beans and asparagus to our pie. if were gonna go hard with lamb were doin expensive fav veggies too. love it mayne! EDIT also miss us on the tomato paste and double the cheese

    I do mine pretty different. I used pearl onions, crimini mushrooms and larger chunks of carrot and celery. then I mix a healthy amount of gruyere cheese in with the potatoes. and in my other comment I mentioned that cabbage would probably be a good addition as well and I want to try that sometime. The cheese makes a huge difference though when you put in your spatula to take out a chunk and it looks like a deep dish pizza almost you know it's going to be epic.

    A couple of suggestions from the UK. Add a couple of Bay Leaves. Use less cream to make the mash a bit stiffer, then rake it out with a fork to make lots of ridges, you will end up with lot more crispy bits of potatoe topping deliciousness.

      I believe that is not a pizza stone and that it is some kind of a cutting block. Look closely at it, you can see marks in it from the knife. If it was a stone, you would not see cut marks in it. However, I could be wrong. I'm thinking that as much of a deal he makes about knives, he'd know better than to cut on a surface that would dull his knife.
