Apparent. But, having said that, my instruments are very basic and I have no idea if it is possible to link them and actually get a true wind reading - it probably is possible, but that would mean reading the manual and I'm not prepared to do that. I would like to be able to switch over to true for those occasions when I want to significantly change course and my brain can't work out what that means in terms of true wind speed and direction.
I've only had a wind instrument for two seasons out of the last 20 so I've always been used to steering to genoa luff telltales and leach mainsail telltale. These and the occasional glance at the masthead Windex all show me the apparent wind so I'm happy to have the extra information of true wind on the instrument. Otherwise it is telling me what I already know.
Apparent for me every time. Being a racing man I don’t care for true wind. Bit like those that only look at speed over the ground and not through the water...aaarghhh what’s that all about? I do look at SOG but through the water is more important IMHO. Andy UK

Apparent but do ‘flick’ to true if running in a blow or prior to altering course significantly. Enjoying your vids- some great non verbal comma.😂

Apparent wind every time if you started your sailing in a dinghy you had a Burgee and tell-tales which only showed apparent when under sail.
