  • Jamie Goode visits Tillingham winery in Sussex (UK). It's vintage time, and after a look round and a chance to taste some 2020 wines (including some from large clay vessels called Qvevri), it's time to go to work, spending a 12 hour day processing Pinot Noir and Pinot Blanc grapes.     Very engaging and surprising video for me. I didn't know that there was a great wine processor in the UK. To produce wine by QVEVRI (sometimes it is called orange) is not easy. Modern machines and stainless steel tools give a purity guarantee. The owner produces wine with enthusiasm and love. Greetings from the Czech republic.

    In Alentejo and all around in (Portugal) they still using this process for some fine wines

    Those red wine stems look very green.....can't imagine what effect they have on the ferments?

      Shouldn't be too scared by green stems. To get brown ones, you would end up with overripe grapes. Just have to handle them carefully and not bash them around too much

    As a home wine maker I pay obsessive attention to hygiene and sterilization of equipment to avoid things occasionally going wrong ,it seems that in large scale production these precautions are unnecessary, do you completely avoid the use of sulphur dioxide in your production methods

    Evidently, the emphasis on sanitation in home brewing wine doesn't apply here when brewing wine in clay vessels.

      Wine is low pH and much more microbially stable

      @@JamieGoodeWA I agree. After all, how in the heck did the ancient world make wine without Star San? Answer: wine is not nearly as susceptible to infection as home brewing supply sellers would have us think, especially after vigorous fermentation begins.

      С помощю "сарцхи" щётка из коры дикой черники. Квеври моется до тех пор пока вода после мойки не будет первобытно прозрачной!
