      Yeah, me too and I still don't get it, lol. Does he only use fruit? Never says how much. Or how much wine you should expect from whatever quantity of fruit...Seems he adds no water or sugar either.

    Good video. So few around of real natural winemaking, showing how simple it is. All videos about winemaking always go down the add-sugar-and-nuke-the-natural-yeast-so-you-can-add our-industrial-yeast route and other chemical winemaking procedures. People - you don't need ANYTHING except the grape to make great wine. A grape is its own wine starter kit - it self ferments once crushed. Don't let them fool you into thinking anything else. All you need is a jar.
    As an aside, so glad natural winemaking and natural wines are finally making some broader inroads. And I totally agree that really refined wines are so boring these days. Once you switch your pallet to natural wines, the oak heavy Cab's just lose all their luster.

      @@notillgrowers I have some grapes that have partly begun to mould. Can I take those away, separate grapes from stems and wash them? Or does the fermentation demand unwashed grapes?
      Can I make wine from biodynamic shop-bought grape juice,
      or a cheaper shop grape juice? Since the latter is not all natural, maybe it needs some sugar?
      Can I use brown rice malt syrup instead of Castrated Sugar?
      Does unsugared, un-yeasted wine make as high an alcohol% as with sugar and yeast, please?
      For how long should it ferment? I get the impression it is much longer than other recipes with yeast and sugar, but maybe that were other fruits/grounds.
      I'd be happy and grateful for answers. Merry Xmas!

      Hi. Here at my place pesticides r used on almost every thing. So if I wash the grapes than also the fermentation ll occur or I have to go for yeast n sugar. One more thing why every one adds water also

    There's no need to burp a balloon cap to release CO2. What you can do is just use a thumbtack to pierce the balloon at the top of the neck where it won't be touching the bottle or jug you use. Then as pressure builds up in the balloon, the CO2 will eventually exit the tiny hole at a rate matching the fermentation gas release. Pressure will always be higher inside the balloon guaranteeing that zero O2 or anything else can ever enter the bottle. In effect, the tiny hole serves as a tiny but very reliable one way gas valve.

    thats how wine should be made. easy and no chemicals added in for the sake of ''better results''
    i started my 2nd batch of wine about 5-6 days ago, and its still bubbling.
    the contents of the brewing bucket is:
    -20% grapes
    -3% sugar (used both crystalized and powdered sugar)
    2 bags of bakers yeast (around 0.5% of the bucket)
    -76.5% water
    every day whenever i feel like the fermentation has slowed down, i opened up the bucket to stirr it for about 5-10 minutes to gas out the wine and of course mix it up properly.
    when it was 3 days into brewing. i deceided to open it up and mush up the grapes even more, i failed to mush up many of the grapes when prepping.
    after its done brewing. im going to remove the solid bits, squeeze out the remaining wine from the solid. and let the wine sit in a same bucket (cause i made the bucket with airlock built into it and its the only thing i got that has airlock on it) for about few days, while also every now and then mixing it to de-gas the wine.
    the reason why theres so little grapes and so much water and sugar is because i didnt have enough grapes.

    Thanks for your interesting video, questions please:
    -After end of 1st fermentation in open container, when no more air bubbles, is there disadvantage of keeping the wine in same container for few days to confirm 100% completion of fermentation alcoholic.
    -Ditto for 2nd fermentation malolactic.
    -Is there disadvantage of keeping the wine with all residues without any filtration in 2nd fermentation malolactic.

    Thank you for your video! before I try this I want to ask how long do I fermented? when I know it is ready? for the smell of wine? I want my wine to have alcohol but not crazy heavy. I love that it is no sugar or special "wine yeast". Back in the day they didn't have any of that stuff, they worked with the natural sugars of the fruits.

    Great video! It's been a big help so far.
    Is it safe to use 91% isopropyl alcohol when sanitizing my equipment? I've been spritzing my spoon with it before I stir my must in primary fermentation. Of course, I wait for it to dry. I just want to make sure that it won't effect my wine.

      Totally. Shouldn't hurt your wine. I'd just let whatever it is air dry a bit

    Thank you for this video! Is there a reason that cloth is needed to cover the first round of fermentation? Could a plastic lid work? Also, if you're not planning to strain out the grape musts, is there a need to transfer this batch to a different container/carboy? My container has an airlock, so I'm curious if this airlock can be used for both the first fermentation, and the second fermentation?

      The cloth is there to keep out dust and bugs but allow for air flow. This ferment needs oxygen, so you shouldn't cover your ferment with an airtight lid

    I am trying to work through this myself and ran into a snag. I used 3 pints of blueberries and two small packages of raspberries, macerated them and put them in a glass fermentation jar with some honey. After a couple days I started to get some really good fermentation. I ended up leaving it for a month, and it continued to vent gas through the glass lid (which is covered with water to prevent anything from getting in). We drank the wine last week, and what I found is that it had definitely brewed (got some warm fuzzies lol), but it tasted very, very sour like Warheads. What did I do wrong?

      Yes! I usually do about 3 tablespoons per gallon or less. If it needs more you can always add it later.

    We had three buckets of grapes my wife wanted to make grape juice and syrup from (she’s not a drinker) but now we have several kilos of grape pomace still quite moist and it’s be ripper if I could ferment it into wine then maybe even freeze distill it. Since it’s been boiled all the natural yeast no longer exists and I don’t have raw honey on me right now. Two questions: will the pomace still ferment from wild yeasts? I assume so, since it’s everywhere, but a definitive answer would be cool. Secondly, as a baker I know sugar doesn’t activate the yeast but in this case, would some form of sugar help/encourage fermentation? Any tips on getting these pre-boiled dregs fermenting would be killer. Thanks!

    I have another question for you as a newbie in wine making I too don't like to insert chemicals in the wine process,my question is to stop long fermentation what's the best method to stop fermentation,is freezing the wine or heating it the answer and if so will the wine spoil or lose it's delicate flavors doing so,thank you in advance,luv your channel

      I wouldn't heat or freeze. The best way is just time. Once the sugars have been consumed and the alcohol reaches a certain level (usually no more than 13% at most for indigenous yeast) the yeast will die. You can fortify it with a little alcohol but thst will chsnge the flavor. Or add some sulfites but like you said, no chemicals. That's my best advice! Thank you for watching!

    Don't you think a good variety of yeast wine would insure a good,safe and speedier fermentation since it's also natural,I am a newbie so I have been experimenting a bit,tnx

      Hi! I don't necessarily have any problem with cultivated yeasts. I just don't find the flavor very interesting. However, I think I mention in this video Didier Dageneau (do I?) who abhorred native yeasts and instead used a mixed of cultivated yeasts for his wines. And they were incredible. It's not unsafe to use natural yeast but it can be slower. However, the flavor and complexity, for me, is where it's at! Thanks for watching! Happy fermenting!

    Is ok to use a metal strainer when taking the fruit out before the second fermentation?

      It’s not preferred but it will work for sure. I have and haven’t noticed any ill effects. At least not on young wines. You can also just strain through some cheese cloth if you have it. Or some clean cloth of some sort (that does not have any detergent residue).

      NO, only wood spoons preferred, it is because the grape juice contains oxides and that react with metal spoons creating oxides of the metal. that turn to be poison, once you consume such wines prepared with metals usually tummy pains and vomiting happen.

      @@notillgrowers I use a washed teatowel and cook it again in plain water so not any soap is left in it. Then I rinse it in cold water and then I use it to strain. Works very good.

    I have harvested about 18lbs / 8kg grapes and I want to try making some wine from them. I've never done it before, but I want to try the natural wine approach if possible, using the bacteria already present on the skins and the sugar in the grapes. However, do I need to add water to the primary fermentation?

      No water! Just crush grapes and that should be enough liquid!

      @@finchcomic Mine too. It will be better when you've seeved and put the wine into bottles. Mine looks like a rosé now after botteling. But thats the sort of grape which I have in my garden. I saw a video on YT where people put the grapes in a food processor. And yes then you have the colour of the skin of the grapes included.

      Minimum seven days but you can age it as long as you want.

    Hi I have made omega plum wine/mead, i have added juice of one lemon and manuka nz honey.
    Its on its 3rd day and is now fermenting by wild yeast.
    Do you think i should put it in my other vessle with air lock now?
    Im just going by my gut feeling...

      I usually keep it covered until the fernebting slows then transfer.

    How long did you keep the wine in a cool, dark place before it was ready?

      Depends on the wine, really. Two to six months is a good time in the carboy then if sweet or very tannic, a year in the bottle. When it tastes good I say drink it. Again, totally depends on the wine. Just taste throughout the process!

      Bryn Mohr hey, if it tastes good I say drink it! Beaujolais nouveau is harvested in September/October and on shelves by thanksgiving. and some of it is super delicious! not complex but tasty

      Fermentation works best at temperatures between 65 -75 degrees Fahrenheit. You can use bakers yeast at Walmart. I often use Welch’s 100 percent grape juice and mix it with 1-1 Welch’s black cherry and grape juice in a Home Depot bucket with 1/2 of lb of sugar. Yield is about 15 percent alcohol. Add some small slivers of oak to your original container after fermentation to age. I often fool Vineyard managers that it’s Cabernet. Yum, and cheap. Respectively

    I don't want to bottle my wine by anybody else's information because they use chemicals and involved...so please make a...what to do after the 2nd fermentation....and how long would you let that 2nd fermentation go...Oh yea... would grape juice and pear juice go together for a wine.... Thanks Again....😉

    I thought alcohol fermentation was an anaerobic process. Stirring in oxygen would only increase the growth of bad aerobic bacteria, but stirring the top layer to the bottom prevents growth by moving the aerobic top layer to an anaerobic area.

      I'd do a quick light wash with plain water, don't want any bug poop or actual dirt in there. But I could be wrong, lol

    Hey man gotta a quick question love the vid btw but I'm making some homemade wine from mullberrys and they are on day 4 of the fermantaion process or whatever but there is still no signs of fermentation at all I'm only using the yeast from the berries can I get some help

      Keep going. It can take 4 days or more sometimes. Stir a lot. Also add a little local honey if you're nervous (contains a lot of yeasts).

    I have tired everything I get get sugar water. I have tired fruit -sugar-ferment and yeast nothing. I am at the point i THINK IT IS IMPOSSIBLE to make wine at home. How much half ass sugar water can you make before you give up.???????

    Good video. Thanks. …. One advise…. Try to pinch a small hole in the balloon. You won’t have to worry about “explosions” . The first time I made it I forgot to pinch the hole and the damn thing blew up at 2 AM. It scared the life out of me and my wife.
