In the summer, I make a version of this in the crock pot so I don't heat up the house. Cook the meat 100% or leave it out and add more beans. Layer everything in the crock pot. Cook 3 -4 hours. I call mine, " Lazy Gringo Enchiladas" because I don't roll them up. A good sauce is simply equal amounts of tomato sauce and chicken broth simmered for 30 min with cumin and mexican spices to taste.

Here's mine. Shredded cooked chicken, large can of green enchilada sauce, can of cream of chicken soup, chopped onion, chopped jalapenos. Layer of corn torts, sauce, layer of torts, sauce, layer of torts, sauce, top with cheese. It's like a Mexican lasagna. Of course sour cream on top if you want. 😉

This looks great. Interesting that I made up my own similar recipe about 2 wks ago and we loved the result. I browned 1/2 lb lean ground beef and 1/2 lb ground sausage along with a package of frozen onions and pepper pieces. I placed that in a bowl, added 1 can of diced tomatoes including the liquid, 1 can of drained corn, 1 can of refried black beans, and 1/4 cup taco seasoning & mixed it all together. Instead of tacos, I placed 8 pillsbury frozen (not thawed)cornbread biscuits (they come in a 12-pack) evenly spaced in the bottom of my 9x13 pan. Then I spread the mixture over them. I placed that in the oven at 350°F for 20 minutes. Then I spread shredded Monterrey jack and cheddar cheese on top, and put it back in the oven for 15 more minutes. I cut it into 8 servings & served it with a side salad. It’s just 2 of us, so we saved 2 pieces to eat a few days later and froze 4 pieces for another time. Next time, I’ll try tacos instead or cornbread biscuits.
I'm going to make this on Sunday! If you are using homemade taco seasoning I would omit the water from the recipe - most commercial taco seasoning has thickeners in it which is why you add water to them. Also, an easy way to remove excess fat from ground beef is to use paper towels. Absorb the amount you want then put the paper towel in the garbage.

Get a close walk with Jesus & cut out all sugar & carbs....STARVE THAT CANCER!! ->If you're strong enough, FAST 2 times a week, (minimum of 17 hrs each time) sip on organic chicken broth, & meditate in God's Word. I wouldn't do any extra gluten if I had cancer Sweetie.. Their is a theory that today's gluten food, can cause stomach cancer. One scientist said 'it's like some mad scientist came up with a formula to cause cancer.' Gluten shuts my thyroid down, and Am very fortunate when I stopped eating gluten, my Thyroid function returned. It doesn't always, gluten can terminate thyroid function.

I cut my tortillas in triangles like a cross to create 4 pieces, with a pizza cutter. That way they lay out in the corners and overlap nice. ❤

I used to make this dish all the time before adding the tortillas and served it as “chili” in a bowl. Delish!

Gluten shuts my thyroid down, and Am very fortunate when I stopped eating gluten, my Thyroid function returned. It doesn't always, gluten can terminate thyroid function.
People who suffer from Crohn's disease need gluten free. Sorry for your cancer but not everyone has the same needs.
My sister has to eat gluten-free foods, or else she gets very sick.

I make several kinds of soup with similar ingredients..Yes he does love his cornbread and buttermilk..Where in Georgia are you from…we live in a small town called Cochran..about 5,000 people..We are Believers and love The Lord🌹
Instead of corn tortillas you could use Mission Carb Balance flour tortillas. 4 grams of carbs and no sugar. Really enjoy your recipes. Thank you!
