We went down to china town and ordered beef and bittermelon cooked in black bean sauce. One day the discussion was about how to cook the bitterness out of the bittermelon. The answer was to use a little more sugar in cooking the bittermelons.
Others have to simmer the bitter melon in water with baking soda, the melon have to be turn over to immerse into the water! Then stuff the mixture and steam or fried will do good to the taste buds! Happy eating. . . 😊
@marychin170...You can use a salt/water brine and let sit for about 15 minutes. Rinse well and it does take a lot of the bitterness out. I, of course love the bitterness so I leave it as is.
Bitter melon is good to regulate your blood pressure. My Chinese dad used to make this often. I just stir fry my pork and bitter melon to get my bitter melon fix! Thanks for sharing!

My mom always grew and made stuffed bittermelon....used to tell me "just eat it! bittermelon is like medicine...it's good for you!". Bittermelon Namasu is also very good...the vinegar cuts the bitterness.
I also make a Burmese bitter melon Pickle that wrings out all the bitterness. My daughter didn't like but when she tasted this she l ike's it. One day I'll make it.

Then saw in my mom's old cookbook honwagin( sp ) set.. abt pickled turnip and to the store I went.. what a difference..that was it the missing ingredient! I make em like you but only difference is i add green onion.. I just grew bitter melon last summer gave to my aunty..im definitely gonna grow more n try it your way.. Looks so so ono.

I will be making a Burmese stir fried bitter melon using pork, tomatoes, tamarind and fish sauce. One of my favorites go to. Lucky the bitter melon this week was only .50 a pound. Usually almost $3 a pound. No one in my household likes it so I share it with a friend.

He glared at them and said, "YOU COME BACK TOMORROW". Dutifully, they returned the following day, and the cook happily presented them with a fu kwa dish. I like to think it was stuffed bittermelon!
Before cleaning out the seeds I parboil the bitter melon slices 3 minutes to remove some of the bitterness and make the seeds and white pith easier ti scoop out... thank you for the gravy recipe

You really can't tell if it's bitter. I don't like to put more sugar.
