  • This recipe for Stuffed Vegan Cabbage Rolls was by reader request. Hundreds of you asked for it, so here is my version. Is it authentic? Not even close, but it IS healthy, and it IS tasty.

    I make mock Cabbage Stuff Rolls. I throw everything together in a baking dish, and then bake in the oven. It's even lazier than it seems. I just use cooked cabbage, cooked rice, spaghetti sauce, and some Italian seasoning.

    These were really, really good. I had to sub some things based on what I had on hand due this pesky pandemic, but kept the ratios pretty much the same. Farro for the rice and Gardein crumbles for the mushrooms. I had no flax nor bread crumbs, but it held together fine. It’s a very forgiving reprice and one I’ll make again. Thank you!

One quick question: for the "riced cauliflower" you added to the cabbage rolls, was it already cooked? I image it doesn't matter too much since the recipes baked for 45 minutes. Thanks Chuck!     Hi, would you have any suggestions for a replacement for the bread crumbs? I don’t do wheat corn or oats. This sounds amazing!

      Just thinking out loud, the bread crumbs help bind everything together along with the flax egg, so maybe some GF bread crumbs? Or maybe some instant potatoes? Bob's Red Mill has potato flakes that are just potatoes and nothing else.

    My mother used a lot more rice and also chopped up the cabbage leaves into the stuffing..maybe bc she was feeding 10 kids on a lb of hamburger!?

    Thin the stalk rather than cutting it out. They will be more stable when you're munching

    I miss cabbage rolls. Suppose this filling can be used to stuff red, orange, yellow, and green 🫑s as well. Hmm…stuffed zucchini boats, stuffed large tomatoes, stuffed baked potatoes? Ok, I’ll stop.
