You could take a look at the sales literature of companies like SAP, Oracle, and IBM. High-touch implies lunches, free demos, sales architect present to answer very deep technical questions, support professionals to explain the different levels of support - because you will need a lot of support for a complex, Enterprise-grade product - and a whole other array of things, like a small team for POCs for some edge cases not covered by the product but achievable via some sort of non-standard customization or integration.
