The #CookMyLife Challenge continues! Follow along as the recipe developer and chef Sohla El-Waylly cooks through recipes that define three different moments of her life.
First up, her mom’s Chicken Korma (:29). As a kid, Sohla would pull the meat off the bones and pile it between mayo-slathered white bread to make a chicken korma sandwich - cut on a diagonal, of course.
Then, Halibut Crudo With Citrus Foam (6:26), a recipe that Sohla learned after culinary school while working at an upscale restaurant. It’s “filled with techniques that you’ll never need in real life.”
Last but not least, Fried Chicken With Chile Oil and Spice Dust (10:08), which comes from Hail Mary, the restaurant Sohla started with her husband.

They could have told her what they were earning so she could ask for the same, but they didn't and all the while they treated her like a scullery maid. @@abeg1571 it's still the contract she signed and agreed to... Even if she had more experience, she should have negotiated better. NFL players agree to unfair contracts all the time to make a name for themselves in hopes of a bigger contract. Most people hadn't even heard of Sohla before BA. Seems fair to me since she became a fan favorite. Then she has leverage for her NEXT contract.

She will bring very few views in the long term. She wasn't a "star" personality (Brad/Claire for example) on BA she was just talented and embroiled with controversy. Those views brought on by the allure of the controversy will dwindle over time.

Anyone else catch that moment at the end where she used to say “bon Appétit!” but was like “uh....what was I supposed to say here? happy NYT cooking?”
When she talked about trying to “upgrade and refine” her mothers recipes, I felt that.
My mom would make this delicious beef stew with canned vegetables, hot sauce and lemon pepper and I thought I’d “improve” it fresh ingredients....it was trash 🗑🤦🏽♀️.

My fav way of upgrading these kinds of dishes is to make the stew without the veggies entirely and just steam some fresh on the side. Add in as much yummy fatty goodness into the main fair as possible but even it out with crunchy greens haha

If anyone from NYT cooking is reading the comments, here's some feedback: The audio quality needs to be much much better. People tune in to shows like this to hear the cook/chef talk and to listen to the satisfying sounds of sizzling, chopping, frying, etc. You need to give them better audio equipment!! Your recruitment is diverse and amazing but your production is not doing them any justice. The quality of the videos are inconsistent even within your own channel. Some videos do a wonderful job with their audio quality, others sound like they were recorded with a cell phone and have a lot of distracting background noise.

ok, I know you were curious, so I looked it up: Versawhip (powder) is a modified soy protein. It exhibits exceptionally consistent whipping performance and is widely used in sugar confectionery products. It'll be a major shift learning how to produce an entire show with correct G&E setup in a home setting, which is a specialist role. Correct audio tech and mix/mastering is an entire career too. Camera and editing is two careers. Then also just the logistics, schedule, and balance sheets of being a Schedule C contractor producing and selling your content.
I'm all for So getting paid and paid equally to her peers in a place she feels valued and supported loved.
But when we said, "pay her," I don't think we all meant, "throw her in the deep end to do ALL THE JOBS alone at primarily her own expense."

The audio is totally fine. Sohla was just a little low in the final mix but I was able to follow the video really comfortably with headphones. I'm stoked to just see more and more Sohla, as much as she wants to work in video. You rock, Sohla! Either the deadlines are too strict, they're understaffed, or the staff just can't be bothered to do their job properly. I'd really love to see them improve. (Also, if NYT cooking reads this, I do need a 6 month internship in about half a year and I'll gladly offer up my services.)

I made the chicken korma sandwich and it was delightful! Thank you for the tip on removing the skins. Going to apply that to all simmered down recipes for chicken, because the skin really does become kind of floppy and weird when simmered down. Going to make the fried chicken soon because that spice mix looks fantastic and I'm so excited. I mean, that's a resto secret and she just shared it so openly. Thank you!

@@davidfields5375 The "fan" commenters aren't fooling anyone that they are here to promote and foster an that Sohla has a huge fan base. I don't know how she recruited a small army of mindless fans or paid commenters, but they aren't fooling the companies or people asking her to do these videos. In fact, it probably hurts her since it is so clearly spam and she is so clearly involved it these spam efforts.
