After being scorned and mocked by his competition, he meets those interactions with humility, even after she boasts about her abilities, or even after she's defeated and still implies that because he is a Earthrealmer he should be weaker than her, he still tells her-"I hope we meet again, under different circumstances." Considering the environment of Outworld and her social standpoint, I doubt she's met many who were not arrogant or boastful of their abilities, so it makes sense that meeting someone kind and humble would thoroughly enamour her. Also, considering this is a reference to Liu Kang in MK9, I dont think it will be surprising if the NRS writers put these two together. If anything it'll be surprising if they DON’T.
Liu Kang x Kitana are destined to be together as Raiden stated in the previous timeline. I was a bit bitter of these changes in this game. That is not before the very end of the MK’1’s Story.
